Seared turnips! Or as the kitchen crew call them tallops! Because we treated just like scallops! Nice sear in some butter after being roasted, giving that tenderness of a scallop all while being a turnip! A little fig jam, leek mostarda, chermoula and some tomato jus!

Now that tomatoes are done we are on to mushroom toast! Using three different varieties from our good friend @dunksmushrooms ! Maitake, turned into conserva, oysters, lightly roasted, then matsutake, raw lightly dressed! All served on our toasted sourdough and some whipped goat cheese!

Ricotta Gnudi! A nice fluffy pillow of ricotta, cooked in some brown butter and sage. Delicata squash from the lovely folks @rootsinreverie . Finished with some pepitas and mimolette cheese! Simple but delicious!

As much as Chef Nick doesn’t want to admit summers coming to an end, the fall produce is arriving! Apples coming in from Fays farm in Haverhill ma. So we decided to make apple cake! Warming spices, soaked with whiskey syrup. Topped with peanut butter cremuex, plum jam and candied peanuts. A fun play on apple slices with peanut butter!

The Exeter Apothecary is pleased to announce that our own Chris O’Neill has been nominated for the New Hampshire Restaurant and Lodging Association’s Bartender of the Year Award as part of their Stars of the Industry Awards! Those of you who have came out and supported Chris and the Exeter Apothecary during their first year will know of the steadfast dedication, limitless creativity, and boundless passion for the crafts of bartending and hospitality which have been cultured within the historic walls of this reinvigorated establishment. In his own words, Chris says: "Last year I packed up my stuff and moved back to New Hampshire for the first time since 2001 to open Exeter Apothecary, it’s been an amazing year! Over the course of the last 13 months I’ve been able to meet so many great new people; industry professionals, guests, and made a lot of new friends. Very proud of my team and the talented people I get to work with. If you feel the same way about the Apothecary and my cocktails, please drop me a vote!"
