Before Bali Hai, there was Christian's Hut. Founder Art LaShelle was a former Paramount cameraman who built the original concept on Catalina Island for the cast of Mutiny on the Bounty. His backing came from Hollywood heavyweights like John Wayne and Fred MacMurray. In 1953, he brought the concept to Shelter Island. He spent $200,000 constructing a circular building topped with a mascot locals called "The Goof." It burned bright and fast. Opened in August 1953, it was renamed "The Hut" by September and bankrupt by the following year. Tom Ham Jr. rescued the property in 1954 and renamed it Bali Hai. LaShelle's vision failed. Three spirits walk into a glass and somehow nobody fights. The Malambo #1 invites Pisco, Cachaça, and Rum to settle into a lush backdrop of Coconut and Mango, but the real surprise is the finish. A toasted-rice note from Genmaicha and Pandan cuts through the tropics to give the drink a savory backbone. Calypso Joe's opened in 1966 on Mission Gorge Road and was gone by 1967. In that single year, "nightclub king" Morty Zlotoff tried to build a Jamaican paradise in a bankrupt restaurant called Stars of the 7 Nations. He went all in. The walls featured tropical murals by Tijuana artist Eduardo Varga. The stage hosted Mighty Panther and his Calypso Carnival, bringing real Trinidadian heat to a strip mall off the I-8. The menu boasted a Caribbean buffet and thirty-five exotic rum drinks. That is serious ambition for a bar that lasted twelve months. When ownership changed, the dream collapsed. No ruins remain today. Just another lost paradise that burned hot and fast. If you think about it, that is the most tiki thing a bar can do. by @falseidoltiki
