There is something rather lovely about the cakes we bake before saffron and pepparkakskryddor find their way into our kitchen.

Ambrosiakaka, an old-fashioned Swedish orange cake, is one of them. I had every intention of making one. But then I thought of silviakaka, another Swedish favourite, with its rich, buttery vanilla topping.

And I wanted the best of both.

So I split the orange-scented sponge in two, tucked the vanilla curd between the layers and finished it with the traditional ambrosiakaka glaze.

A little Mallorca, translated to northern Sweden. For our tasting menu. Cheesecake there often came with plum compote.

Here, I looked to the forest instead. The wild raspberries we picked late into summer, made into ice cream and pépin, with a caramelised cheese curd cheesecake. by @fanny.zanotti

Today I took a cutting from my one and only (shock!) geranium. It’s now living in the kitchen. Soon I’ll take the mother plant down to the cellar.
