🚨UPDATE!! Our Bake for Ukraine mobile bakery has been on the road! Mission number one went to the southern city of Mykolaiv where we made 4 van-loads of bread which were delivered to villages in Kherson. It was a big team effort! Volunteers took it to Chornobaivka and Antonivka, which is less than 2 miles from 🇷🇺 held territory and aid is badly needed there. Four different NGOs were involved in the mission - with @baron.photo in charge of all the logistics, he is our hero … we had a fantastic team of volunteer bakers on board who came down from @goodbread_fromgoodpeople in Kyiv - huge thanks to @vladkasip, Yurii and @oki_lofty for doing all the tireless baking work - total stars! The lorry and flour and crucial help with logistics came from our great friend @karstenfuhrken and @bfplichoplich who are a fantastic Ukrainian NGO with a wealth of experience and expertise in the region. And we were so grateful to Pastor Viktor for letting us park the bakery in the grounds of his church. Thanks to @legacyofwarfoundation for their wonderful support too - and none of this would be possible without @mkalenska who is the driving force behind everything. We welcome donations to @bake.for.ukraine - as we have plans to not only keep helping Mykolaiv and Kherson with bread over the summer.. but our aim is to expand our work in other parts of Ukraine - there are unfortunately a lot of places which need it. Superb chlodnik - chilled beetroot soup - two ways…
1) chlodnik with smoked buttermilk and broad beans @fiufiu.bistro in Krakow - excellent lunch with my friend Mike before I got the train to Ukraine
2) the cake of the day was strawberry crumble cake, so that was a must
3) such a lovely location in the market - thanks @nad_nosk for the tip!
4) the night before I left I went to the lovely @gardenmuseumcafe with @nikalozovska and had chilled beetroot soup with focaccia - so good
5) the red pepper with green freekeh and ricotta was just what I wanted too
6) the best desserts by @gabbergrams - blackcurrant tart with fromage blanc and elderflower jelly with beautiful gooseberry ice cream.

STICKY TOFFEE MADELEINES!!
Starting the post about @tombrownatthecapital with dessert… as it was so STUNNING.
So excited to be invited to dinner here - I don’t often eat fish but this was very much the place to have it… I remember how creative @cheftombrown was at his first place Cornerstone and he’s won a Michelin star with it here.
Everything was so delicious, from the prawn toast and soda bread filled with mackerel pate and the truly outstanding bread course - warm shokupan and squid ink bread with mussel butter and crab oil - to the cod with pistachio, carrot and cods roe… what a combination!
Two fish I’d never even tried before - cured gunard with a vichyssoise and a very delicate bream tartare with incredibly precise radish placement… impressive!

Sticky date bread pudding with caramel @marayrestaurants in Liverpool - this was fantastic

Excellent falafel plate to start @marayrestaurants

Loved the roast cauli with tahini @marayrestaurants - what a great place!

Really enjoyed the summer fruit Bostock from @the_wild_loaf in Liverpool

Fantastic summery starters @jolene_newingtongreen with @nad_nosk - such delicious produce used in a super creative way

Chilled rice pudding with cherries @jolene_newingtongreen - perfect summer dessert

Delicious summer salad of apricot herbs and buckwheat - a slight twist on a @nigelslater recipe in the Observer

Look at this amazing spread at the @bandofbakers summer picnic! So glad @nad_nosk could join us too. Introducing her to multiple ways with cheese scones.

I made 2 different cakes and took the apricot salad along and so many people made incredible things to share - I love @bandofbakers !

Don’t sleep on the kaiserschmarrn at @fischerslondon - the most delicious thick pancake cut into random pieces in a rich warm cherry compote with sour cream - if you’ve never tried it before it’s absolutely delicious!
The chilled borsch was perfect in the hot weather, I am never not ordering borsch when I see it.. and also enjoyed the poached trout with beetroot and chard and a side of sauerkraut… what a treat.

Hundreds of beautiful cakes @cakepicnictour organised by @saltedrye in London at the weekend… the only question - where to start!
I made a Ukrainian honey cake from an @annavoloshynacooks recipe using honey I bought back from Sumy in eastern Ukraine, and although it was a bit wonky it seemed to go down well!
We were in the last group to go up and choose cake to eat so I have zero photos of that process - all a bit hectic… but I did very much enjoy some carrot cake and Guinness cake (and a tiny leftover corner of mine just to check it was good)
Lovely to see @deesbasement @bakedbybenji @allday.cake @aprilsbakersisters and thank you Elise for bringing it to London - the Sunday lunch of dreams! 🎂🍰🧁🍓 taken in Greenwich Park by @felicityspector

THREE GREAT NEW OPENINGS…
@vesper.restaurant by @jackson_boxer in Exmouth Market seems to be an instant success, full of happy customers, really intriguing menu with lots of irresistible choices - giant canele, anyone? Yes please! Also how could I not order a bean salad with gooseberry tahini. And a pan of ‘crab fat rice’. Very happy that this is literally on my doorstep.

@kinzrestaurant is a truly beautiful Lebanese restaurant in Notting Hill, take time to check out the fantastic photos on display by a Lebanese photographer. Perfect summer food, such rich and silky hummus, delicious salads, aubergine many ways. A real showcase for the food from this beautiful land.

@nofortynine_london is in the heart of St John’s Wood, the cornbread Madelines were a fantastic start - also loved the polenta with whipped ricotta and some lovely salads and vegetable sides. And do not miss the crack pie for dessert.

It’s a tough time for our local restaurants and imagine working in a kitchen in this heat - I’m always so grateful for their hospitality, please do go out and support them if you can! 🌞💛 taken in Clerkenwell by @felicityspector

Bravery & Bakery with BFU @bake.for.ukraine
in Odesa & Mykolaiev, Ukraine 🇺🇦 Slava Ukraine ✊

For this Bakery Session we did :
_Country Sourdough loaf with Viron Levain 100% Sourdough @moulins_viron
_Croissants, pain chocolat with pistols from @xoco.gourmet and fruit danishes with @president.butter
_ baguette, fougasse, baguette garnies with local cheese & Honey

During this session, we distribute 205 sourdough breads and some croissants in the villages near frontline with the resistant Bakers from BFU @bake.for.ukraine Ukraine 🇺🇦

BFU is a non-profit initiative and volunteer organization that secures the local food supply in Ukraine by baking and distributing free bread to vulnerable civilians, hospitals, and frontline communities.

They also support war-affected bakeries with funds, equipment, and ingredients.

The organization operates extensively in highly affected and frontline regions, including Mykolaiv, Odesa, Kharkiv, and Kyiv.

Their key operations include:

Bakeries : Deploying converted vehicles (like modified Swiss Army trucks) to remote and hard-to-reach villages that lack functional infrastructure.

Preserving Culture: Protecting traditional Ukrainian hearth-baked breads, such as Palyanytsya, while sharing these bread-making traditions globally.

Global Solidarity: Raising funds internationally to provide salaries for bakers, flour, and fuel to keep community ovens running.

The magic of my trips to Ukraine is always to see people so happy to receive the bread we make. 🍞🇺🇦

On my recent trip to Mykolaiv, Ukraine, I again spent time with the @bake.for.ukraine team, helping bake and deliver fresh bread to villages in the Kherson region.

This was my fourth visit, but things looked a little different this time. With the old Swiss Army truck sadly broken, the team have carried on in a small bakery next to it in the DOV Centre, using two electric ovens and traditional Ukrainian recipes. The bakery is run by three women bakers, who bake 4-5 days per week, with deliveries happening 1-2 days per week.

In the two days I was there, around 250 loaves were baked (supporting around 100 families). We mainly made two different sourdough breads: the Victory bread (a white sourdough) and a rye/wheat mixed bread. All the bread was delivered to two villages, 1-2 hours away.

Daily life in these villages is incredibly difficult. Many people have no nearby shop, no easy way to travel, and very limited access to basics. Most of the people the team meet are elderly, living in places deeply affected by the conflict. There is always a bit of tension when we arrive, as everyone wants to make sure they get their breads before we run out.

I also like to be in the Ukrainian countryside, with fields and fields of wheat or sunflowers everywhere you look. I find it strangely peaceful, although there is always a risk coming from the sky in the form of drones.
