Hi there 👋 My name's AJ, and I'm the owner of Fely's Coffee Company.

My grandmother’s name was Fely, and I always told myself if I started anything food or coffee related, I’d name it in her honor. I believe my sense of joy from serving people food and drinks came from her. One of her favorite ways to show love was always asking people “Did you eat yet?" and it's something I do myself.

I'm both terrified and excited to get this business going. I hope to make all the people that helped me get here, as well as my future supporters, proud. If you've read this far, thank you. Hopefully I'll get to serve you some drinks one day 🙂 by @felyscoffee

What’s the best way to make your own syrups?

There’s not really a right or wrong answer. It depends on your own circumstances. If you’re short on time, cooking a simple syrup in the stovetop is great. What you lose in brightness and acidity, you make up for in speed.

Simple syrup: ✅Fast ❌ Lose brightness

If you have time or like to experiment, you could make a cheong, which is equal parts sugar to a fruit. And all you have to do is mix them together and leave them on your counter to dissolve. This takes MUCH longer but if you’re patient you can get a much brighter, fresher tasting syrup, since no heat was used to dissolve the sugars.

Cheong: ❌Slow ✅ Keep brightness

HOWEVER, if you have access to a sous vide machine, you can do a hybrid of those two methods, which is how I’ve been making my syrups recently. You get to control the temperature so it doesn’t go above boiling, AND still retain the fresh flavor of the fruit. Best of both worlds in my opinion.

Sous Vide: ✅Fast-ish✅Keep brightness

Regardless of what method you choose though, making your own syrups is an easy way to elevate your home barista setup :)

Buy the grinder 1st!

I think a lot of people new to coffee are super excited to purchase an espresso machine. I get it. You’re already imagining the ✨aesthetics✨ of it sitting in your kitchen. Or worse, you have “a bad machine” and you absolutely NEED to upgrade (not necessarily true).

But do me a favor and pause ⏸️. Espresso machines can cost a pretty penny 💰💰💰

Before buying the machine, I always recommend getting a good grinder. The size and consistency of your coffee grinds play a MUCH bigger part in the final flavor of your espresso.

A cheap grinder will lead to uneven grind size, which leads to uneven extraction, which leads to uneven flavors. You can have a $9000 dollar machine… and still produce subpar coffee 🫣

On the flip side, if you have a decent grinder, you could have a $500 espresso machine and produce really good coffee. A good beginner grinder usually start around $200. If that’s too much you could even start with a hand grinder for under $100! And there are grinders out there that can grind for more than just espresso, giving you a lot more flexibility on how to brew your beans.

My point is, don’t get sucked into just “looking” like you know how to make coffee. Actually learn how. Start with the grinder. And if you have questions, that’s what I’m here for :)
