My response to people asking me if I’m ready for my 30’s is ‘Are my 30’s ready for me?!’ 😂

I enter the third decade of my life more sure, more secure, more firm in Christ, more loving, more patient, graceful, more fun, more silly (embracing my inner child), more fit and more beautiful 😜😂.

So yeah. Been ready. Thanks to God and my community for getting me here 😘💜. Let’s go

On the 11th of March 2023, we went to @boroughmarket and the plan was simple - to get some @breadaheadbakery doughnuts because @itsjoshyouare had never tried some before.

As always on a weekend, it was overwhelming so we decided to grab some lunch from @bao_london.

Until this point we were just friends but as the meal was ending.. I just knew I wasn’t ready to go home yet and neither was he.

& that was it. We went to watch Puss In Boots:The Last Wish and started to see each other weekly after that.. and now we are married. We came to realise it was because we found home in each other 💜

It made sense after saying ‘I Do’ legally to end up back at the place where we first said it in our hearts.

Well, it’s finally here!

By here I mean it’s on TikTok. 😆

After eight attempts, I have posted the recipe on my TikTok. I would post it here by Instagram does not support long captions.

It’s been an interesting journey and I’ve definitely stayed away from the oven ever since. Despite being challenging, it was quite nice to be passionate about baking again.

Thinking of getting a substack to give my recipes a 🏠. But we will see.

🧁Red velvet cupcakes(Tea With Bea recipe)

* 2 eggs
* 225g caster sugar
* 1 ¼ tsp salt (6g)
* 250ml sunflower oil
* 1 ½ tsp vanilla extract (7g)
* 150ml buttermilk
* 2 tsp bicarbonate of/baking soda (10 g)
* 2 ½ tsp apple cider vinegar(12g)
* 225g plain flour
* 1 ½ tbsp (22g) Dutch processed cocoa powder (I only use 1 tsp which is 5g)
* ¾ tsp red food colouring paste

This can make 15 cupcakes. Double like I did to make 30 or a tall 4 layer 6 inch cake. If making a cake each tin should have about 420-450g of the batter.

1. Preheat the oven to 170°C or Gas 5. This depends on your oven. Mine works better at 180°C or Gas Mark 6.
2. Line a cupcake tray with cupcake cases.
3. Combine the flour and cocoa powder and sift twice.
4. Put the eggs, sugar and salt in a large mixing bowl and whisk together. Once the mixture appears lighter, add the oil in a steady stream until fully combined. The mixture should thicken.
5. Put the buttermilk, bicarbonate of/baking soda and vinegar in a smaller, separate bowl. The mixture should bubble and set aside.
6. Add a third of the flour mixture to the egg mixture and mix until well incorporated. Add half the buttermilk mixture and mix until just combined. Repeat with another third of the flour mixture, then the rest of the buttermilk. Finally, add the last third of the flour mixture and mix until thoroughly combined. Scrape down the bowl.
7. Add the food colouring last and stir until thoroughly incorporated. Spoon the mixture into the cupcake cases.
8. Bake in the preheated oven for20-25 minutes. After 20 minutes, insert a wooden skewer inserted in the middle of a cupcake should come out with almost no crumbs attached. Leave to cool on a wire rack or on foil like I did.

I tried to recreate the banana bread bun from @bunsfromhome and added a few things I thought would make it better.

Me: I wanna rest this weekend.

1&2. Challah bread French toast with Greek yoghurt and plum compote.
3. Cupcakes for the kids to decorate
4. Tried something new. Creamy.
5. Can someone recommend a nice kombucha please?
6. Addicted to these Apple Danish Lattice treats from Sainsbury’s.
7. Vietnamese Chicken wings. Found this recipe online and decided to test it. Loved these although they reminded me of salt and pepper wings from my local Chinese takeaway spot and now I wonder who’s lying? 😂 by @fifunmib
