This feels like a dream... We couldn’t believe we were shortlisted as finalists, let alone even thinking of winning. It is an absolute honour and we are so grateful for this recognition and encouragement. We wanted to build a space where everyone is welcome and can enjoy delicious food and drinks alongside fun music and art and be themselves. And we have so many people to thank along the way. We were only able to achieve this with incredible generosity of so many wonderful people.

A little kitchen discovery over the fire. 🔥

Our chefs have been experimenting with a few old-school cooking techniques that you don’t really see much anymore and fine tuned it to an absolute gold in the Firepop kitchen.

The key is heat. The pan has to get fiercely hot, and that intensity is only possible directly over the hottest section of our live-fire grill.

Prawns hit the pan with an aromatic Maotai infusion, then get sealed under a lid, creating an instant rush of intensely flavoured steam.

Once they’re out, they’re finished with a little more of the infusion, shallot, ginger and chilli oil.

A few seconds over the fire: juicy, aromatic, smoky prawns. And wait till you see what it does with fish... taken in Firepop by @firepopaustralia

Some news we’re very happy to share 🍷🔥

We received three goblets and a Wine List Service Award at Australia’s Wine List of the Year Awards 2026!

Our wine list is personal. It’s built around wines we love, producers whose stories we want to share, and bottles we’re excited to put on the table alongside our flame driven food.

One of the best parts of what we do is finding something you’ll love - especially when it’s a grape or region you’ve never tried before. Seeing both our list and the care our team puts into sharing it recognised means a lot.

Thank you to the judges, our producers and suppliers, and our team, who taste, learn and share that excitement with us.

And thank you to everyone who’s asked us to choose a glass, tried something unfamiliar, or come back for a bottle they loved. You’re a big part of what makes this so rewarding.

Earlier this year I was asked to paint my interpretation of @firepopaustralia Chef’s table by @firepopray @alinavanhou

This was a welcomed & challenging concept to tackle, working across 4 panels attempting to achieve continuity & individuality, whilst also working with subjects I don’t tend to portray in my previous paintings.

Working off numerous reference material to construct an image showcasing Firepop’s Chef’s table all year round - my aim was to convey the energy, vibrancy, warmth & generosity you would feel whilst dining at the venue in any given season.

120ish hours of painting this gave me some personal groundbreaking realisation in what direction my work is heading towards in terms of application, process & conveying subject matter.

Lots of joy making this. And a lot of Fred Neil.

A couple of weeks back, I was very fortunate to put on a solo exhibition ‘Rolling Upon My Day’ @firepopaustralia - launching a commissioned painting for the restaurant whilst showcasing 30 works over the previous 6 years.

It felt great to be curating & executing a show demonstrating development & tangible progress over several years.

Many many thanks to all those that came by, took the time to have a chat & see what it was all about.

A special thank you to @firepopray & @alinavanhou for putting the event on & giving me the space to showcase my work.

Aiming for another solo show at some point next year featuring a bunch of new works with some potential collab shows in the mix too.

In the kitchen, we’re looking for a Chef de Partie and Commis Chef. For front of house, we’re looking for experienced section waiters and food runners.

We care about people who take pride in their work, look after the people around them and want to keep learning. You’ll work closely with our team in a restaurant centred around live fire, great produce and warm, generous hospitality.
