RECIPE ALERT! 🍳 Have you tried shakshuka? (see below for full recipe)

If you're new to it, shakshuka is a comforting one-pan dish of eggs gently poached in a rich, spiced tomato sauce. It's a popular breakfast, brunch, or easy dinner that's perfect for scooping up with warm naan or crusty bread.

This version is topped with creamy feta and fresh cilantro for a meal that's simple, satisfying, and full of flavor. ❤️

🌱 Ingredients (Serves 4)

• 2 tbsp butter
• 1 large onion, diced
• 1 red bell pepper, diced
• 2 garlic cloves, minced
• 1 (20 oz) can diced tomatoes
• 1 tsp harissa paste
• 2 tsp ground cumin
• 1 tsp sugar
• Salt, to taste
• 4 large eggs
• Fresh cilantro, chopped
• Crumbled feta cheese
• Warm naan, for serving

👨‍🍳 Directions

1. Melt the butter in a skillet over medium heat. Add the onion and bell pepper and cook until softened.

2. Stir in the garlic, cumin, harissa, and sugar. Cook for about 1 minute until fragrant.

3. Add the diced tomatoes, season with salt, and simmer for about 10 minutes.

4. Stir in the cilantro. Make four wells in the sauce and crack an egg into each.

5. Cover and cook for 8 to 10 minutes, or until the eggs are cooked to your liking.
Top with feta and more fresh cilantro. Serve with warm naan and enjoy!
