So quick and easy for summer when it's too hot for the oven to be on for long.

Giant cous cous has been given a thumbs up from my kids. It's texture is more like pasta and I used chicken stock to cook it which gave a great flavour. Otherwise, mint, parsley, red onion, spring onion and peppers completed the salad. I then mixed in juice and seeds from the tomatoes and used the flesh and skin in the meatballs. The meatballs also had a little cumin, red onion, egg and flour mixed into pork mince. I mixed greek yogurt, lemon juice, mint and parsley to make the sauce.

Key lime pie

I got this cookbook in the Caribbean and the key lime pie recipe is delicious. Can't believe I haven't made it recently.

Pork and rice

This was so delicious

What i did

Fry pork with diced garlic (3 cloves) and chilli (choose your heat preference!). Add Chinese 5 spice, 3 table spoons soy sauce, and once nearly cooked add honey. Took about 15mins.

Boil rice with diced broccoli (peas allergies here!) And 5 mins before the end i added shredded cabbage. Drain and mix through soy sauce.

Mix 3 eggs and fry (i just pushed the pork to the side)

Mix all together and top with chopped spring onion and coriander.

The 6 year old ate it, on a sunny day, in the garden. The ultimate test of a meal.

Followed with key lime pie.

Its not big and its not clever, but it is cooking how I used to which I miss. I used to start cooking with not much of a plan and make it up as I go. This is the most fun way to cook (in my view).

So this is a zingy lime chicken dish that surprisingly my fussy 6 year old son loved. I was just pleased it wasn't bolognese....again.

What it involved.

Roasting peppers and butternut squash in the oven with a smoky bbq spice mix.

Frying diced garlic and chicken in a pan and then adding a small amount of Cumin, plenty of ginger, zest of a lime and juice of two limes. I added a tiny amount of chicken stock then reduced and cooked the chicken through. I then mixed a bit of the liquid with cornflour and continued frying until the sauce was now a thick coating on the chicken. Added a squeeze of honey. This would be nice just like this, but I needed it to be a sauce to go with the rice so I added a small amount of double cream and some water to create a sauce.

Served with rice and the veg.

This would be great with more ginger (if my kids aren't eating it) skip the cream and just serve it as nuggets with coconut rice, salad, tacos or wraps.

Banana, fig and walnut loaf cake

Swipe for recipe from hamlyn 200 cakes and bakes. I added more walnuts, swapped dates for dried figs and put in slightly less than it says, swapped caster sugar for light soft brown sugar and skipped the lemon juice. I used 5 small very overripe bananas.

A day of easy meals while I get over this chest infection. Hope all these fruit and veg help!

What I made

Fruit smoothie - innocent tropical fruit juice with mango and passionfruit kefir, unflavoured protein powder and some dried tumeric, cinnamon powder and ginger.

Roasted salad with houmous - in this case sprouts, peppers, courgettes and fennel

Steak pie - slow cooked beef in red wine and chicken stock with shallots, lardons, mushrooms and some sugar then thickened with corn flour and topped with puff pastry and served with even more veg and buttery mash

Banana cake with chocolate icing

Creamy lemony garlic chicken pasta bake followed by chocolate and raspberry self saucing pudding.

I have a chest infection and limited energy so these two dishes require no effort whatsoever. Throw it in, mix it about, put it in the oven. The end.

What I did

In an oven dish 300g dried pasta, a pack or diced chicken breast, boursin cheese, baby tomatoes, chopped up spinach, chopped broccoli, a lemon cut in half, a bulb of garlic with the top cut off and 500ml boiling water. Cover with foil and bake for 45mins at 180c fan.

Meanwhile prepare the pudding. Mix 125g self raising flour, 2 tablespoon cocoa powder, 100g sugar, 125ml milk and 60 melted butter and 60g chocolate chips and raspberries. In another bowl mix 50g brown sugar, 1 tablespoon cocoa powder. Then butter an oven proof dish. Ideally a deep dish rather than shallow.

Once the pasta bake is done take out and squeeze lemon (catch seeds in a sieve) squeeze garlic bulbs in a bowl and mash and mix in. (If you don't like too much garlic leave out or leave half our and mix tomorrow with mayonnaise)

Then boil a kettle. Put the raspberry chocolate mix in the buttered dish. Sprinkle the sugar mix on top. Pour 200ml of the boiled water gentleon the top and put in the oven for 30mins at 180 while you eat the pasta.

Serve the pudding with some full fat greek style yogurt.

Easy!

Danish dream cake

I love Ruby Bhogal's round the world in 80 bake series and thought this recipe look right up my street! No need for icing or decoration, nothing fancy just over the top sugar and butter goodness. Well I am sorry to say (mostly because I have just made it and have no other cake available) I just don't really like it. It is too much. Too buttery. Too sugary. That's not to say I didnt eat loads of the topping till it gave me a headache - I 100% did. But I usually I can't stop eating cake I have made but this one I can. I almost fear it. I seem to be out of sync here with the internet view on this but it is what it is.

Creamy sausage bake

What I did

Slice a large leek and 2 large carrots and cook in a little butter at a medium/low temperature until soft. Add six sausages cut up. I used pork and apple sausages for extra flavour. Cook until sausages are cooked, mixing occasionally (about 10 to 15mins). Add a teaspoon djion mustard and half a pack of cream cheese (150g). Mix and then off the heat Add thinly sliced potato. Spread a little oil or melted butter on the top. Bake 180c for 45mins. Serves 4.
