The secret is out🍔

6-ounce porcini-rubbed dry-aged beef burger (a blend of dry-aged NY strip, ribeye, and short rib).

Topped with caramelized red onions and slices of torched Gruyère and white American cheese.

Finished with a punch of horseradish dijonnaise and cornichon pickles, all served on a toasted house-made sesame brioche bun.

For your dipping pleasure, the burger is served with a sidecar of Gruyère fondue and red wine beef jus. The French always say, “It’s all about the sauce.”

Available only at the Fleurette bar, all night, every night. by @fleurettesd

Chef Travis Swikard adds a $95 Market Feast to @fleurettesd. 🌿

Five courses, family style, and the whole table has to be in.

@travisswikard opened Fleurette in La Jolla in December: 120 seats behind butter-yellow doors in an office park, a garden he planted with his father, a wine list built on Old World and California bottles. It’s a beautiful room, and it’s built for a big night out.

The Feast is the other way in. Five courses for $95, shared across the table, is a generous number for what lands on it — and it’s the same structure he built at @callierestaurant, where chef’s-choice family style became how most people eat. It makes Fleurette an easy yes on a Tuesday, not only an anniversary.

It also isn’t a fixed menu. The Market Feast changes and evolves to the day. What’s served on Wednesday most likely won’t be there on Friday.

What you’re actually buying is his sourcing.

We followed him for a day to see it. Eight in the morning at Tuna Harbor Dockside Market, where every fish is sold by the person who caught it, and he walks the whole thing before he buys anything. Uni from Luke Halmay, whose father has been diving this coast since the seventies. Tomatoes from @rodneykawanofarms, third generation farming Oceanside and Vista. Burrata from @amanocheese, pulled by hand. Honey from @mikolichhoney, beekeeping across San Diego and Temecula since 1985 — the only honey used at either restaurant. 🍯

By noon it’s all stacked at the back door, and the work that follows is the part nobody sees. Whole fish broken down in-house. Duck aged 14 days. Pasta rolled that afternoon.

Across five courses of starters, pasta, fish and pastry, the goal is a table looking for more than a meal — a genuinely localized version of dining done with intent.

There’s a line on the menu that just reads “Line Caught Market Fish.” No species, no price. It doesn’t get filled in until somebody at the dock hands him something.

📍 @fleurettesd — 4727 Executive Dr., Suite 100, La Jolla. Dinner Tuesday–Sunday. Look for the yellow doors.

Heart health is personal ❤️

This year, we’re honored to support the Eric Paredes Save A Life Foundation and their incredible mission to prevent sudden cardiac arrest in young people through free heart screenings, education, and awareness.

After recently losing our dear friend and colleague Steve, and remembering beloved chef @chefjameskent and the countless others our hospitality community has lost too soon, this cause feels especially close to our hearts. In hospitality, we spend so much of our lives taking care of others, and this is a reminder of how important it is to take care of ourselves and the people we love.

With so many young people making up our restaurant family, we’re especially proud to support a program that encourages heart health awareness from an early age.

Founded in memory of Eric Paredes, a 15-year-old San Diego student-athlete who tragically lost his life to sudden cardiac arrest, the foundation has helped provide tens of thousands of free heart screenings to young people throughout our community.

Their next Screen Your Teen event takes place October 25 at Mission Bay High School, offering free heart screenings for young people ages 12–25.

Please help us spread the word. A simple screening could make a life-changing difference. ❤️

After a decade cooking in some of New York’s best kitchens, Chef Travis Swikard came home to San Diego and is helping put our food scene in the spotlight.
At his restaurants Callie and Fleurette, his focus is on not just great food and great hospitality, but also the local people who make it happen. He also gives back to the community in a big way.

Chef Swikard sat down with NBC San Diego anchor Catherine Garcia to talk about it all for this week’s People You Should Know. 🍽️

You can watch their extended conversation now on the NBC San Diego YouTube channel.

We’ll say it plainly: @fleurettesd is the best restaurant in San Diego right now. And the reason is the guy walking the fish market at 8am. 🌿

@travisswikard was born and raised here. He left to cook in Europe and New York, and it was his first mentor, Gavin Kaysen, who brought him to Daniel Boulud. He spent roughly a decade as Boulud’s right hand. Then he came home, opened @callierestaurant, earned Chef of the Year more than once, and made it a Michelin-recognized room. Fleurette, open since December, is where he goes back to the French Riviera cooking that formed him, built on San Diego ingredients.

His whole philosophy comes down to three things: what’s in season, what to leave off the plate, and who he buys from. You can taste all three.

We followed him for a day to see how obsessive that last part gets. 👇

🐟 Tuna Harbor Dockside Market, where every fish is sold by the person who caught it. He walks the entire thing before he buys anything.
🟠 Uni from Luke Halmay, whose father has been diving this coast since the seventies.
🍅 Tomatoes from @rodneykawanofarms, third generation. He skips the pretty ones for the split, lumpy fruit that stayed on the vine longer.
🧀 Burrata from @amanocheese, pulled by hand.
🍯 Honey from @mikolichhoney, the only honey used at either of his restaurants.

Then the work nobody sees. Whole fish broken down in-house. Duck dry-aged 14 days. Pasta rolled that afternoon.

That intent is now the easiest way in. His new $95 Market Feast is five courses, family style, the whole table in, and it changes with whatever the dock and the farms give him that day. What you get Wednesday likely won’t be there Friday.

There’s a line on the menu that just reads “Line Caught Market Fish.” No species, no price. It isn’t filled in until somebody at the dock hands him something.

That’s the whole restaurant in one line. That’s why it’s our pick.

🚗 And yes, it’s in an office park, which means parking is easy: $10 valet, or 3 hours of free self-parking with validation.

📍 @fleurettesd — 4727 Executive Dr., Suite 100, La Jolla. Dinner Tue–Sun.
