Spending summer just north of Indianapolis watching cars do circles and, while doing so, had the privilege of using a clean kitchen for the first time in ~10 months. Today we made Steak Tartare, the best thing to come from France.

Finely cube ab 8oz of a filet and dice up 1 tbsp of red onions, chives, capers, and cornichons. Then use 1.5 tbsp of Dijon mustard, 1 tbsp of horseradish sauce, 1tbsp olive oil. Add salt and pepper, mix that all together, bake some slices of a baguette, and throw an egg yolk on top.

Felt like it was missing some flavors and went overkill w the Dijon but overall, pretty solid. by @foodatsponge
