And just like that… I turned 40. Surrounded by my Carries, Mirandas, Charlottes and Samanthas, I danced the night away in tulle, pink and disco lights. Haute Guac-ture Nachos, plenty of glam, and even a personal note from Candace Bushnell herself. A blast? More like the start of a fabulous new chapter!

As I sat there, looking back at the glitter, the guacamole, the disco balls and the tule twirls, I couldn’t help but wonder… was turning 40 really just an excuse to become the star of my very own Sex and the City episode? One thing I do know: no cosmopolitan, no high heel, no pink feather could ever shine brighter than having you girls by my side. Here’s the proof… captured forever by the one and only @jesjevphotography

Crispy Baked Cheese Onion Rings (Only 2 Ingredients!)

Forget everything you know about making onion rings. This 2-ingredient oven hack skips the messy flour batter and deep frying entirely, using aged or Parmesan cheese to lock in a deeply savory, shatteringly crisp crust around the onions.

• Prep time: 5 minutes
• Bake time: 20 minutes
• Total time: 25 minutes

Ingredients
• 2 medium (regular) onions
• 75 grams aged cheese or Parmesan cheese (finely shredded)
• Optional: A pinch of paprika, garlic powder, or black pepper

Instructions
1. Preheat: Heat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
2. Slice: Cut the 2 regular onions into rings.
3. Arrange: Spread the onion rings evenly across the baking sheet.
4. Cheesy layer: Top the rings with the 75 grams of shredded aged or Parmesan cheese. Make sure the cheese covers the rings well so it melts into a crispy shell.
5. Bake: Pop them in the oven for 20 minutes until the cheese is deeply golden and crispy.

Let them cool for a minute so the Parmesan or aged cheese hardens completely into that perfect crunch! by @fooddeco

Entering chapter 9 with lots of sparkle! ✨ We had the best time celebrating Olivia’s 9th birthday over the weekend. The girls first decorated cupcakes with edible diamonds, and then bedazzled their own snack boxes to fill at the candy bar. So proud of their creations! 💎🎀 by @fooddeco

A little Monday meal prep for the week ahead.

A big pot of veggie curry madras, prepped for the @safecourtkitchen 11-piece storage set. I love that the containers are not only practical for storing and prepping meals, but also look lovely on the table for an easy Monday night dinner. Two for dinner, while the other 9 are filled with meal prep for the week ahead, tucked away in the fridge and freezer and ready to go.

And even better: the entire set is completely microplastic-free. by @fooddeco

I turned GNOCCHI into CHURROS… and my kids went CRAZY! And yes, it can. Crispy, warm, covered in cinnamon sugar and ready in minutes. The easiest after-school snack that somehow tastes like churros.
CHURRO GNOCCHI

400 g gnocchi
1 tsp cinnamon
1 tbsp sugar
A little oil or butter

Mix the cinnamon and sugar together. Add more to taste, or simply use cinnamon sugar.

Fry the gnocchi in a little oil or butter until golden brown and really crispy.

While they’re still warm, toss them in the cinnamon sugar and coat well.

That’s it. So easy, so quick and SO good.

They were gone in seconds.

Botox in a tin? If you think you hate sardines, you’ve been doing it all wrong. This 1-ingredient sardine crunch is about to change your life. It is crispy, salty, packed with omega-3s, and the perfect topping for avocado toast, Caesar salads, or a fried egg. The possibilities are endless!

Ingredients:

1 tin of sardines (in olive oil for extra crispiness, drained)

Step-by-Step Instructions

Preheat the Oven: Heat your oven to 220 degrees Celsius (430 degrees Fahrenheit).

Prep the Baking Sheet: Line a baking sheet with a piece of parchment paper.

Drain and Mash: Drain the excess oil or liquid from the sardine tin. Place the sardines directly onto the parchment paper. Use a fork to mash them completely until there are no large chunks left.

Spread it Thin: Press and spread the mashed sardines into a very thin, even layer. The thinner you spread it, the crunchier it gets.

Bake to Perfection: Pop it into the preheated oven for 10 to 15 minutes. Keep a close eye on it towards the end. You want it to be deeply golden brown and sizzling, but not burnt.

Cool and Crumble: Remove from the oven and let it cool for a minute. It will become even crispier as it cools down.
