Team Canada had its challenges since 1987 (the year the competition started) but under the visionary leadership of Chefs Canada they transformed the way they operate. We document the metamorphosis of Team Canada and talk about why this competition is so important to everyone in Canada.

Chef Seb demystified Armenian food for me as he walked me through elevated forms of his childhood faves. @talineto is a creative endeavor, the brainchild of 3 brothers fusing flavours from Armenia and Lebanon in a tasteful manner. The concept is sure to please traditionalists and newbies of the cuisine. The plates are delicious.

Chili Chicken's iterations are fascinating. We speak a bit about the version we ate at Yueh Tung where Toronto was first introduced to it. That was 1986, and though most dishes have stayed the same....much is different.

Chef @ridetowander an expert on Chinese regional cuisine accompanies me to find out how the past influences the present and to taste some delish Hakka food.

Ground zero at Yueh Tung where Toronto was first introduced to that fiery wok kissed poultry dish; Chili Chicken. That was 1986, and though most dishes have stayed the same....much is different.

The venerable woks seasoned with the wisdom of generations have been gracefully passed down to the owner's daughters. The location has moved. Eating behaviors are drastically different. Survival in this new environment is well..precarious.
