Heads up, Colorado gardeners! The National Weather Service has issued a Freeze Watch for Thursday night (10/15) into Friday morning (10/16), with temperatures potentially dropping to 27–33°F across Fort Collins, Boulder, Denver, and surrounding areas!! We’ve been growing our own food since 2013 in this region and we ain’t scared… Here’s how to protect your gardens before the cold arrives! 🍅 VEGETABLES: Harvest tomatoes, peppers, cucumbers, and squash before Thursday evening. Cover tender greens with frost cloth or blankets. Hardy crops like kale, spinach and root veggies can generally tolerate a light freeze. 🌸 FLOWERS: Cover frost-sensitive annuals like marigolds, zinnias and nasturtiums. Harvest any blooms you want to save! Established, cold-hardy perennials will be just fine! 🌳 TREES & SHRUBS: Most established, cold-hardy trees will handle this freeze. Protect vulnerable new plantings, mulch around roots, and water only if the soil is dry! 🪴 POTTED PLANTS: Bring tender plants indoors or into a garage. 🧤 FROST PROTECTION: Use frost cloth, sheets or lightweight blankets, securing the edges at ground level. Remove coverings when temperatures warm. 💧 DON’T FORGET: Disconnect hoses and protect exposed outdoor plumbing! And remember, gardening season does not end at the first frost! This Creamy Pumpkin & Butter Bean Soup was the stuff of seasonal foodie dreams! 😍 We had a partial can of pumpkin lingering around after whipping up some pumpkin pancakes over the weekend, so I came up with this little dish (although I must give inspiration credit to @plantyou because it’s a twist on a new butter bean recipe in her brand new book!). 🎃 I sautéed a vidalia, several cloves of garlic minced, a cup of vegetable stock, a nearly full can of pumpkin (or about 2 cups of baked-until-softened pumpkin from your garden), a can of full fat coconut milk (can substitute for any lower saturated fat option but it was very filling with those plant fats!), 2 cans of butter beans, Dijon mustard, sage, thyme, paprika, salt, pepper, a heaping helping of white miso! The miso was a last minute addition just to make it taste like it had been slow cooking, when in fact the whole thing took 5 minutes! A little tomato paste would have also done the trick! We served it with some crusted bread and a bouquet of microfennel. 🥣🌱🥖 Our fennel microgreens are one of my favorite things we sell, but we don’t normally grow them year-round! A monarch stopped at our zinnias today! 🦋🌼 Monarchs pass through Colorado during their fall migration, and late-blooming flowers give them nectar for the journey. If you’d like to welcome them to your garden, plant for both adults and caterpillars: 🌸 For nectar: zinnias, asters, goldenrod, blazing star, blanketflower and rabbitbrush. Aim for flowers that bloom from summer into fall! We have been seeing tons of asters on deep discount at all the local nurseries! 🌿 For caterpillars: native milkweed. It’s the only plant monarch caterpillars can eat. Showy milkweed and butterfly milkweed are two options for sunny Colorado gardens. When to plant in the Fort Collins area: Fall is a good time to sow native milkweed and wildflower seeds so winter can provide the cold period many need to sprout. The NRCS visited us last week and recommended we scatter pollinator seed mixes out in November by our pond! Just scratch the surface of the dirt a bit and disperse the seed freely! Plant zinnias after the last spring frost, and keep some blooms going as long as you can in fall.
