We have a very special offering this weekend of lobster and matsutake foraged Mushrooms. Price is $30 a pound. Foraged from the Pacific Northwest.

Lobster fungi are best prepared with a good cleaning, and cooked with a lot of fat and deep heat. Delicious in risotto and stews. A slight seafood flavor.

Matsutake is a rare wild mushroom that grows in pine forest and is prized in Japan. It has a strong spicy pine aroma, firm texture. These mushrooms have a complex flavor profile. Earthy, nutty and meaty with a slightly sweet and spicy taste. Some have described it as being across between a mushroom and a pine tree.

These mushrooms will be in limited rotation at some of the farmers markets this weekend. We will also have them at the farm until sold out. Feel free to reach out to us direct to ask about availability and pre-sale. by @fox_fungi

I cracked this open in the galley while working a flight to Seattle yesterday. Passenger comes out of the bathroom and asked if I was eating pickled eggs. I offered him some and then another passenger came up and so myself in two strangers shared pickled quail eggs on a flight. This company makes absolutely the best pickled eggs I’ve ever had. You can find them at the Old Colorado City Farmers Market Saturday from 7-1. by @fox_fungi

Brick and mortar with actual 100 year old brick and mortar.

Fox Fungi is getting a new home. We have finalized our retail lease and will open our urban farm stand before 2026 comes to a close. You will find us off Broadway and Iowa in a very familiar space. Built is 1926, this structure has old charm and we’re betting a ghost or two.

Our farm will be moving to new digs and become a closed facility to the public. In interest of having availability for our customers to stop in and grab fresh mushrooms 7 days a week as farmers market season comes to a close, we will be opening retail.

The store will offer fresh, freeze dried and dehydrated mushrooms. Seasonal foraged fungi from the Pacific Northwest. Mushroom specialties from Italy. Our current line of pantry products plus a few new ones in the works. We will also carry seasonal produce from our farmer friends. Locally sourced food pantry products from around Colorado. Mycology supplies and the best mushroom/fox curated gifts around. And the best part is a dedicated space for my daughter to sell her Japanese delights with @taeko_san_takeout

We will receive keys after repairs are completed and open immediately to the public while we set up so that we can close our current location and prepare to move to the new space. So please ignore the chaos and dust but come on in and say hi! We will announce the date of transition. It’s a short 1 mile distance from our current space.

We are still going to be very much involved in farmer’s markets! It’s in our blood and we will always drop booths each season around the state. Much love, Kevin, Rachel and Jackson. by @fox_fungi

Have you retired from flying yet? No. But, there are some benefits. As we work at getting closer to opening our official urban farm stand retail store, we decided to fly to San Francisco and visit a popular farm store. @farwestfungi has a beautiful storefront on the wharf. We even found our friend Jen with @mokshachocolate was featured there! The flights for two people were $4 round-trip. Booked a rather skeezy hotel in an unsafe neighborhood. Spent 24 hours disconnecting from the business. I came back a little rejuvenated with some ideas for the future opening. It felt wrong to have both of us gone for 24 hours. Mr. Fox slept for 12 hours straight so I know his body needed a little break. We are back and excited to move forward with our plans for 2027. by @fox_fungi

A 20 hour workday leads to a little rest and relaxation in San Diego on a layover. I always have to hit the Wednesday Farmers Market in Little Italy. If you’re not aware of San Diego is elite for the donut scene. And always stop at Quick Bites for my favorite brisket and rosemary focaccia sandwich. @ by @fox_fungi

Vendors, how was your week going? Pretty stellar over here. Fairly certain there’ll be about a 24 hour sleep day after this season has ended. Fatigue is no joke. by @fox_fungi

So what would you do?

Yesterday I had been up for a solid 24 hours when I made the drive down south to drop off a Market set up. I arrived at 4:30 in the morning and had unloaded the set up. I parked where the food trucks will come in for a 7 AM opener. At some point while unloading the set up my debit card fell out of my pocket. I had just gotten gas to make the drive down.

Around 6 PM last night I received a text from Square showing a receipt for a food truck. We were home and nobody had made any purchases on this food truck down south. I opened up my bank account to see that this food truck had sent three charges through my bank: one for $500. I immediately called my bank and filed a fraud claim. They sent the refunds through because they could tell there was fraud being committed. They have opened a case.

I immediately text the business via Square and the number on the receipt. I called the number on the receipt and was sent to voicemail. When I advised them that I had opened up a fraud case, the messages were now being answered. They admitted to using my card without my knowledge and sending these charges through. The bank needs me to file a police report which I will.

My question is, should I also contact the Market manager to let them know this occurred? My thought is that if they would do it to a vendor, how many times do they do this to customers that are purchasing out the food truck. They manually entered in my card number. There was no tap or swipe done. The receipt showed that they were manually entering in the number. The empath in me doesn’t want to completely destroy a business, but I also think that there needs to be some protections in place for anybody who just went and purchased off the food truck and their cards are being stolen. They admitted in a text they did it and were trying to refund it on a card that had been canceled. My account is frozen for 10 days while we wait for a new card to come in prohibiting us from paying any of our daily bills for the next 10 days.

What would you do? And the minute you send a message to me and started out with “yo”, I’m already pissed off. Grow TF up. We aren’t homies. by @fox_fungi

School is back in session and we were blessed with college students and teachers off season to help us get a running start this year. We have 2 students leaving next week to study abroad, one teacher returning to work and an employee moving away to be closer to family.

With that being said, we have a few markets that we would like to bring people on to help us close out the season this year. If interested please email us a contact at foxfungi.com.

Jocelyn, Maudie, Brian and Payton we are going to miss you!! ❤️❤️ by @fox_fungi
