POSTS STORIES REELS TAGGED
Life moves so fast. Yesterday marked my 5 years of no more booze. No more to the comforting stranglehold on my endeavors. No more forgetting things I want to forget. I’ve lost so much time in that drunken stupor. It all flies by without notice.

I didn’t even realize the anniversary was upon us until Debbi mentioned it to me the day before. I guess once you get the snowball rolling it does become easier. Easier, definitely not easy. I’ve made it through some of the toughest chapters in my life. My story is far from over though.

The nonstop whirlwind of constant, chaotic stimulation of this world is unbearable at times. More so than ever. Keeping a positive outlook seems more bleak as of late. Yet, here we are. Doing the thing. Or at least trying. That’s all we can do. One day, one moment at a time.

I just wanted to hop back on here quickly to say hello and confirm proof of life. I know I haven’t talked with many of you in a long while. Please don’t take anything personal. I have been working on my mental health and that has and will be my priority. I don’t get out much any more, nor have much desire to as of late. I did run into a few friendly faces briefly at Flavors of the Ave Sunday and it was genuinely a nice treat. Someday I’ll be up for socializing again.

Keep safe out there. Try and not loose sanity or compassion. Love unconditional. Cook more with family. Tip heavily if you can. And get off social media for a good while. See you soon on the next adventure. by @fredmuser

Why hello again, friends. It’s been a while. A couple of weeks of social media break turned into a few months. Focusing on life around me and working on my mental health is and will be priority.

Less phone and screen time has been a blessing. Highly recommended. I do miss all the going on and events in the city, but it’s been too much at times.

I still struggle on the daily with depression and anxiety. I am lucky enough though to have folks in my life that understand.

I am also grateful to be in the kitchen again, a part of a wonderful, talented team. I love to cook, and I feel at home in the bustling organized chaos we call the industry. Takes a certain kind of crazy to do what we do. And I wouldn’t want it any other way.

The folks at work have a lot of passion for food, much like myself. It’s a very small team and everyone works damn hard. They should be proud. I know I am. Come say hello sometime and get a couple of tasty eats and treats @paffutophilly by @fredmuser

It’s been a year. The worst I ever had as of yet. A long, treacherous, chaotic, saddening journey. Some of the days I wasn’t even sure I was going to make it to the next. My head has been a constant mess of emotions and deep thought. I made it though, so far. And I’m forever thankful to all the folks who helped me along the way.

A year ago I held my mother’s hand for the last time. I was very lucky to have her sculpting my childhood in raising me to be a kind, loving, caring human. I was taught to treat others as the same human beings, question everything, be respectful, be honest, find the good in the world. I was always encouraged to make an informed decision based on my own perception, not someone else’s. Work hard, enjoy life, love. Love as much as you can. And I’ll continue in her honor, with her love.

There is much much more I want to say, but I can’t get passed the tears. Another day for another time. by @fredmuser

The happiest of birthdays to @thedebbi

I am forever lucky and grateful that I had the chance to have our lives cross paths again.

Easily the kindest, most gentle, genuine humans I’ve ever met. Lover of all things chocolate and rainbow, animals a plenty, and all the cute and beautiful too.

This past year has been the toughest time in my life. Never left my side once. Always and will always be here for each other. Can’t wait to spend the rest of my time here on this earth with you.

Love you with all of my being

It’s not everyday you find someone with such talent and skill. In Philadelphia it happens more often then not. Last night’s dinner at @roxanne_philly confirmed my suspicions. Alex, aka, @pastry_slut_ is one of those rare talents.

Already falling in love with the technique and execution of the tasting menu. I can’t wait to try all the wonderful pastries on the weekends. Looking forward to returning to see what else she has cooked up.

One of the best calves brains I’ve ever had! Thank you so much for the kind hospitality and delicious food. Don’t wait to make plans for dinner. And after the meal, peer into the kitchen, and realize she does it all by her self! All the love and best wishes Alex!!!! by @fredmuser

I love food. Seriously. I think about eating my next meal before I finish the last at times. One of my favorite aspects of it is how diverse it is throughout the world. There is near infinite combinations of flavorful ingredients with a plethora of culinary applications.

Sometimes ideas begin out of necessity, others convenience of time or locality. Or read or viewed online. A combination of many usually. And sometimes it’s a simple desire. Today, I wanted pork roll.

I’ve watched some videos recently on Hong Kong style scrambled eggs. If you haven’t tried them out yet, I would highly recommended. Wish I had better eggs, and also a nice wok for this style, but, I managed. Would have liked the curds a little better, the wok would have helped immensely. The potato starch was a game changer.

It was definitely not the traditional style at all and only served as inspiration for my own. Used lots of black pepper, topped with dark soy, extra hot Valentina, side of Taylor pork roll, and some old toasted pumpernickel with Irish butter. Oh, and some Turkish coffee for good measure. No reason not to have a little bit of the world for breakfast.

Get inspired out there and cook something. Don’t hesitate to try something out of your norm. There is so much amazing food out there to have fun with! by @fredmuser
