I have. And I doused it in delicious Calvados too.

I’m waiting for a delayed flight back from Geneva and I wanted to show you this video from last year featuring the outstanding Vacherin Mont D’Or AOP from @fromagerietyrode who I’ve had the pleasure of spending the weekend with.

Stay tuned for a very exclusive behind the scenes view into Vincent’s maturing rooms - an incredible privilege as he does not open those doors to many, if any.

🧀 Ils sont de retour et on sait à quel point vous les attendiez !
Les Monts d’Or Suisses, onctueux, coulants, sont enfin de retour !

🍂 À déguster simplement à la cuillère, avec un bon morceau de pain ou chaud au four avec quelques pommes de terre pour les soirées qui commencent à sentir l’automne.
La saison des Monts d’Or est officiellement ouverte !

Pssst… Die Herstellung des Vacherin Mont d’Or AOP hat in der Käserei Tyrode begonnen! Wir nehmen euch mit auf einen kleinen Rundgang durch die Käserei. 😉
👉 Was man sich sonst merken sollte:
- Ab dem 18.09. erhältlich (nur noch 2 Tage!!!!)
- Mindestens 15-mal gebürstet
- Hergestellt in der Schweiz, im Waadtländer Jura
- 21 bis 28 Tage gereift
- Und natürlich mit einem lokal hergestellten Fichtenholzband umringt🪵
Kurz gesagt: Wir lieben sie und können es kaum erwarten, bis sie endlich da sind! ⏱️

The first stop on my recent visit to Le Gruyère country was at Fromagerie Tyrode (@fromagerietyrode) and it was honestly mind-blowing.

It's a @gruyere_aop dairy where they also make Vacherin Mont d'Or, a wonderful seasonal cheese only produced between October and February.

What struck me most was how they use AI and modern technology to achieve incredible efficiency and consistency, but without losing any of the quality that comes from their traditional production methods.

It's shifted my perspective on running a dairy business in the 21st Century. It was one of the most well-organised, happy workplaces I've visited - you could see it in the staff and the whole atmosphere around the place. Very special!
