Boreal Field School curriculum became ‘grouse butchery’. Wasn’t the plan but that’s how it goes out there.

Gave the Korpi knife a solid test run at bird butchery - then back into kitchen prep. Sasu really nailed this design - Knifewear carries them now!

@sasulaukkonen @resqknives @knifewear

Got to have a good look at their diet, and how interconnected it all is in the boreal.

And yes we ate gizzard and heart and liver. More on that later. by @fromthewildca

I grew up with this place being called “the bush.” Singular.

It took many years of continually finding new treasures within it to understand how rich this place really was.

Not one thing, but an assemblage of cool plants, fungi, and animals — the vast majority of which are relevant in the kitchen or bar.

It’s why I kept coming back - the more you learn, the more you see.

It’s always a bit surprising which species will inform your visit.

Like this one. I knew it well, but not well enough to know it would become a star of the field school.

The mundane becoming not so, because of some knowledge and attention. by @fromthewildca

Boreal Field School just wrapped, and wow was it a gem of a stretch in the fall boreal with a team of great folks. We even had my dear pal @ericcwhitehead co-guide for a half day!!!

My goal as a guide - facilitating ecosystem fluency. Sure feels like mission accomplished.

The day the cranes arrived.

Hard to describe - we could hear them as we waited for a few Canadas, then faint thin clouds appeared on the horizon. Then they came closer by the thousands. And straight at us. They are now part of the equation on the grasslands we call home.

Hunting with the kids for birds in this place is 🙌🏻🫠

My uncle Peter started it all in 1972.

A fun and productive morning hunt with Jeff Nonay.

This past couple years my shotgunning has progressed from ‘probably-not-adjacent’ to ‘not too darned bad’. This year I’m focusing on calling skills - which have been shockingly effective thusfar.

Putting some more call and decoy gear in the kit, rethinking blind setups, and generally planning to be out a bit more than usual.

I grew up watching my uncle’s goose hunt videos on beta. I guess it stuck. by @fromthewildca

In my brain, my summer ocean life and fall hunting life are worlds apart. But then I live the transition, and one immediately flops into the other.

One week: summer long-table dinner.
Next week: cider pressing.
Next week: shooting geese in swaths of oats.

And now the countdown is on: hunting season measured in effectively eight short weeks. Calendar analysis stakes just got high.

This waterfowl hunt with Preston? Idyllic.

Loads of geese close to camp. Quick and easy permission. Varied setups. Loads of action. Loads of good food and drink, and meat to bring home.

If nothing else happened this hunting season, it’s already won.

The milky way with a kiss of aurora.

Fall in the grasslands, has arrived. It’s goose hunting time for us - our neighbour arrowed a bull elk, and a stranger we met was stalking pronghorn with a bow.

Decompression and camaraderie are the trophy.

Happy hunting season hunter friends. by @fromthewildca

Trophy. On a recent foraging walk, I had a group out and wanted to show them a particular mushroom species (always a poor plan).

We were near the end of the walk, and despite looking, we hadn’t found one. So I pulled out my phone and showed them a photo — just wanting their brains to have seen it while we were still in the field together.

A few seconds later, I looked down and there it was.
Comb’s Tooth.

Hericium coralloides is one of those mushrooms that looks almost impossible to be real. Out of place. It’s considered a choice edible, with no toxic lookalike — about as good as it gets when describing a wild mushroom.

It looked to me like it was just starting to happen, so a few days later I checked a few of ‘my spots’. And found this gem. And more.

Already have some ideas how to fold this beaut into the Aug 29 Forest To Table menu. 🤘🏻

Polyrhythm Brewing is one of my favourite breweries in Edmonton, period. It also happens to be my local.

So when brewer Chelsea tapped me on the shoulder and mentioned she wanted to make a spruce tip beer, I think I said yes before she even finished asking.

Chelsea, Taylor and I picked the spruce tips. We did fuss a bit on which ones we chose - tasting each tree one by one to get Chelsea’s green light. We foraged pounds and pounds.

Then came brew day.

All that time in the forest came down to one shot: applying that wild flavour to a 1400L batch of beer.

The result?

Most craft beer folks I’ve spoken to about it said something to the effect of: “Well if somebody’s going to get it right, it’s Chelsea”. It’s in a pocket of spruce-forward, without being too much. The fruity grapefruit lemon vibes, savouriness, with a finish of resin and green banana that many conifers have.

Pleased as punch. Chelsea absolutely crushed it.

It was an honour to be part of this — working with one of the best brewers in our rad local brewing community, and seeing people at the taproom order a beer flavoured by the forest over, and over. And over. The staff love it too.

1400L of seasonal, foraged flavour.

Then it’s gone.

Love that.

Always fun to get at em. Saw one on my morning walk in someone’s lawn, and thankfully had a couple hours free.
