Issue #03 has arrived slap-bang in the middle of London’s endless heatwave. It is in fact launching a couple of months late (won’t bore you with the details on why), but maybe it’s more appropriate it lands in peak summer… the season of abundance, vitality, life, yet also arguably the toughest time of year for body image.

#03 intends to be a glorious celebration of all things FAT. From a photographic walking tour of New York’s culinary decadence, to essays and recipes on lardo, butter, caul fat, ghee, coconut oil, our industry friends offer up heartfelt, humorous and insightful musings on what ‘fat’ means to them.

We also delve into the complexities of where the term sits within our current moral code—namely in the prevalence of body dysmorphia and disordered eating in the restaurant workforce, as well as a beautiful essay on junk food and grief. Elsewhere, Kat Wood’s award-winning photographs document the female workforce that sustains England’s agricultural output, offering a powerful takedown of our national narrative of abundance and plenty.

This issue aims to interrogate our discomfort with ‘fat’, dismantle the moralism attached to food, and be a glorious celebration of hearty appetites and joyful eating. by @full__mag

So starts the inaugural issue of FULL. Magazine. Over 100 pages, we explore what hospitality means today. It’s a celebration of the comfort of old-school dining, the conviviality of a good pub, and the skill of the front of house teams that beckon us in to our favourite spots. ⁣⁣

We also explore some of the issues within the industry: is everyone welcome to work in it? Is the guest still god? And how do we welcome people into our communities, and country, with food? ⁣⁣

Everyone wanted to write about !butter! 🧈

But what an honour to give it to @polly_quick , longtime friend and ridiculously talented baker (ex founder of @sidingyard in Norfolk, currently @therivercafelondon).

She’s treated it with the respect it deserves, with a beautifully simple recipe for brown butter biscuits—no-nonsense, no fuss, just a few ingredients that let that nutty brown butter do all the talking.

“The food is simple, and layered. Decadence, minimalism, grand, sweet, savoury, chaos. calm. Every sense covered. I daydream of this luxury that teases you from the other side of the glass; of confirming your want for something you don’t need. Of this near luxury that seems unattainable. Maritozzo, mille-feuille, clotted cream, Eton mess, buttercream, banana pudding… Like the first sun after a week of
rain, that feeling of full, pure bliss.”

#03 kicks off with a photographic walking tour of New York by @chwhat. It’s a love letter to the decadence and culinary abundance of her adopted city—a feast for all the senses that delights in pleasure for pleasure’s sake.

But with shots always taken from the outside looking in (at market places, or through windows and display cabinets), her photos also ask: who has access to this luxury? Who are restaurants for? Who is included, and excluded, from experiencing quality produce and the joy of eating?
