White Matsutake
- Tricholoma magnivelare

Slicing Matsutake is so satisfying.

Matsutake can't be appreciated by cooking like a regular mushroom. The have a very delicate flavour and aroma(cinnamon hearts and dirty socks - intoxicating scent). To enjoy them to their fullest, slice into small strips, brush with oil, and grill. Drizzle salt at the end.

Sublime. Truly a culinary experience

Maitake aka Hen of The Woods

120lbs of Maitake aka. Hen of The Woods
- Grifola frondosa

Matsutake are my favourite mushroom to forage, but Maitake are our favourite mushroom to consume. Hen of the woods is the pinnacle of Medicinal meets Gourmet. Its extremely nutritious, high in protein, and very high in Beta glucans - essentially its like the edible version of Chaga(predominantly beta gluten saturated). It has a rich Umami flavour and when pan fried and lightly salted, one would have no idea it's not a delicious meat of some kind.

A truly successful day of foraging is a combination of precision skills(timing, temperature, tree identification, location), and serendipitous luck. Sometimes, even if you have everything dialed in, the mushrooms gods may not shine upon you. That was last Fall for us. 2 months during prime time foraging with NO rain. It was a nightmare.

This year, our luck has returned and nature has hit us with both barrels.

Most of this was picked from trees I harvest from every year, in 3 hours time. We left the market at 4:30, arrived at our one forest at 5:30 and picked until it was dark at 8. Then picked for another half an hour in the dark. There is much more out there to be picked, but my lust and greed have been satiated, at least for now.

Grade 1 Button Matsutake and 2s and 3s

There is no mushroom that is so exhilarating to forage - in my opinion.

Awesome day of Matsutake foraging today. In 3 hours I was able to pick about 20lbs of beautiful Matsutake mushrooms on top of a breathtaking mountain. Had some brief moments where I felt like I was back picking in BC. One sniff off one of these beauties is all it takes to go back. Picture cinnamon heart candies and dirty socks. There's nothing else like it and I can't get enough. I felt like I could smell them before I found them!

Found some real giants! Giant Matsutake, giant lobster mushrooms, giant hedgehogs.

I'll upload more pictures over the next few days. Big thanks to everyone who wished me luck, it seems to have worked

Grade 1 Eastern Matsutake

My absolute #1 favourite mushroom to forage

Starting off our expedition this morning in Northern Ontario. We came exclusively for the Matsutake. Our timing was perfect. Going to be an awesome day

Interestingly, when I started foraging these in BC a decade ago, they were named Tricholoma magnivelare, Tricholoma murrillianum was the Eastern variety - but a few years back they switched the Latin names for Eastern and Western Matsutake, so now the ones we pick out East are magnivelare. I used to sell mushrooms the guy at Boomers in Terrace BC, the guy responsible for the name change.

In general, I find most mushroom taxonomic changes daunting to keep up with, and so I don't. Unless there is a significant visual difference for the name change that doesn't revolve around a different spore shape, etc; I refer to the old latin names I grew up foraging with
