Fuyu Fest 2026 bestsellers ❤️

Wow, I did not see this coming! Not in the current economic climate, and not based on previous years' stats either.
1. More expensive bottles than ever before. Yes, because the prices themselves are going up, but there was a stronger trend toward small bottles and less expensive sake the last 2 years.
2. More junmai daiginjo, and doburoku, baby! No matter the style sweeties are always successful, but we saw disproportionate interest in Heiwa Lemon, Ichinokura Yuzushu, and Daisekkei Strawberry Nigori. All 3 doburoku sold well (>1cs) but Nova and Pink took the cake.
3. Less interest in funky stuff! Or maybe we didn't serve enough funky stuff?
4. Sparkling still going strong, although not as much as previous years. Akagisan sparkling made its way into your hearts, though :)

The average bottle price here was $41, but if we account for the small sizes, it was closer to $46 for a 720ml.

Never fails to surprise me how different Fuyu Fest best sellers look compared to our usual shop statistics. The environment of the large festival really does emphasize sweeter, more flavorful brews, while "quiet" sake benefits more from the relaxed environment of Sunflower Sake. Fascinating, yall :)

Cheers! 📊 taken in Sunflower Sake by @fuyufest

Keep Portland Weird

This is the story of our custom doburoku, a thick, old-school farmer’s style sake, made by @novabrewingco in Los Angeles.

Honestly--this story goes back to June 2021 when I first visited Nova because I’d tried a bottle of theirs and thought it was great. James tasted me on some exciting things at that time but in 2022, I returned and on that visit tried his doburoku from the tap....which REALLY stuck with me. I've been a dobu head ever since.

In June I finally decided to take the dive and hit up Nova for a custom doburoku timed to land at Fuyu Fest. He offered to customize, and my first thought was to use Luna koshihikari farmed organically in the Sacramento valley (90% polish)-- basically eating rice, not sake rice.

Fast forward to November, I finally had time to work on the label. I was inspired by Daijiro’s As Time Goes By, which communicates the vibe of the sake through its label art. I felt like the vibe of this brew was going to be relaxed, sunny, fluffy in the way doburoku always is, and I wanted to also acknowledge the diverse origins of rice in the USA. Many iterations followed...I really didn’t have the skill to pull off my original vision so I had to simplify. I went with a charming, relaxed scene of a woman enjoying nova dobu in the LA sun, with a fluffy dog that looks like steamed rice, incorporating both the Nova logo and hanko. A label that tells you the sake inside tastes like LA sunshine.

By mid-Dec, the fresh rice had dried and was delivered to the brewery. On NYE James set to work and built the mash. After a low and slow fermentation over January it was bottled, capped and single pasteurized on January 26th. The pallet was picked up Tuesday— shoutout to @fifth_taste for handling the transport— and it landed in Portland on friday the 30th, which was a shitty day in the US so I only took 1 photo 😓

But I was sooo happy to finally see it, finally taste it, James did an phenomenal job bringing out the tropical sweetness of the rice. It tastes like kiwi, mango, pineapple, fruit salad on a beach. I really hope you love it. Club members will all be getting a bottle, and of course... you can taste it at Fuyu Fest on Sunday Feb 22nd too <3 by @fuyufest

🖌️ Fuyu Fest feature: Team Fukuoka- Water Calligraphy with Fuku Nakamura

Fuku Nakamura ( @fuku.shodo ) was born in Fukuoka prefecture, the northernmost region of the southern island of Kyushu, in 2000. She took up shodo, Japanese calligraphy, at the early age of three. Nakamura-san was raised by a family of Hakata doll craftspeople, so the traditional arts have always been an integral part of her upbringing and visual identity.

As an adult, Nakamura-san has carved out a space for herself in the future-facing side of the shodo world. While her work utilizes traditional Japanese materials such as mica and gofun, the applications of her work are as wide ranging as designing original fashion pieces featuring her calligraphy, logo design for Shuwan ceramics, and label designs for some of Japan's most contemporary sake labels.

At Fuyu Fest, visit the Team Fukuoka cluster in the sake tasting hall to practice water shodo (no ink, just water!) with Nakamura-san and you learn the story and inspiration behind the labels she designed for Librom Craft Sake and Ryokan Ohana’s Hakushaku Ale. Of course-- Librom and Ryokan Ohana are part of the team too, and they'll tell you all about the sake & mikan ale while you taste it as well :)

Tickets are on sale at fuyufest.org.
