sweet, plushy Japanese milk bread dough filled with homemade almond frangipane, and interchanging orange rhubarb and strawberry rhubarb jams (made by @lisableid). these were delicate, warming, and oh so cozy.
hello fall! I missed you. 🍂💛 by @galetteprincess

I missed you, galette! some of y’all know I got a GI diagnosis this spring after years (!) of discomfort. when pretty much everything is guaranteed to upset your stomach it makes cooking and baking a whole of a lot less fun. my focus had to shift to getting my nutrition in and managing symptoms rather than baking fun projects for creativity’s sake. I am sooooooo pleased to say that I’ve finally landed in a much better place, and although I’m certain I will always be managing my GI symptoms, I can now get back to eating a variety of foods that I love without fear.
which brings me to this galette! the summer sun has softened and there’s a breeze in the air - which means my oven is begging to be used. the long weekend gave me lots of time to be home. I spent the last few days shifting between reading, napping, baking, and watching films - and it was truly my kind of heaven.
making this reminded me of why I love baking galettes in the first place. yes - they’re delicious, but mostly, they’re so beautiful. the laminated pastry, glistening brown potatoes, specks of herbs and pepper shards in the light. phew! I just love to look at it. and it brings me incredible joy and satisfaction to make beautiful things. this was very much a use-what-you-got galette, with baby potatoes that were sitting on the counter, lemon thyme from our herb garden, and a sour cream, scallion & cheddar base from the fridge. savory, warming, and so satisfying. we’re sooo back 🧚🏻 by @galetteprincess

late summer always brings nostalgia. I didn’t get to go to Greece this summer, and somehow squelching seedy tomatoes between my fingers brought me right back there. in Peloponnesus, my pappou Niko biting into a cucumber whole, a small piece of tissue paper soaking up the blood on his cut mole from shaving. my Yiayia Theodora’s shaky, crooked thumbs wielding a paring knife to cut wedged potatoes into a large pan. the cicadas have been loud again, and with the windows ajar and the buzzing overhead fan I feel like a child again, sleeping on a squeaky cot alongside my siblings. home really does have a blurry definition, especially for children of immigrants who know the home we yearn for isn’t the one we grew up in. as I get older though, my body knows, my bones know. I miss you Ελλάδα, I promise I’ll be back soon. ❤️ by @galetteprincess

when me & my baby get in the kitchen together.. magic happens ☝🏻blistered cherry tomatoes dotted with lemon thyme and garlic on a bed of creamy polenta with pecorino romano, all topped with (perfectly, imo) seared lemony, buttery scallops & basil💋 by @galetteprincess

pasta alla Norma with farmers market eggplants & fresh basil and oregano from my baby’s garden. prettiest bowl of pasta I’ve ever made and the perfect meal to enjoy after a day by the pool 🍝 by @galetteprincess

posting this fasolakia immediately after eating it bc it was so good and I want to share it with you all. φασολάκια/fasolakia (green beans) are a classic λαδερά dish meaning they’re cooked with generous amounts of olive oil. this dish is so simple - tomato sauce, onion, potatoes, green beans, olive oil of course, salt & pepper. my partner is also Greek, so cooking & enjoying this nostalgic meal together in our home together hits different 💭💕 happy summertime babes by @galetteprincess

some of the many tasty things I’ve been cooking & eating offline this year.

a little bfast taco to take the Monday scaries edge off 🙏 by @galetteprincess

first meal of 2026 had to of course be my favorite breakfast of latkes & poached eggs served with pepper jelly, sour cream (or in this case, Greek yogurt) and topped with scallions. the eggs poached perfectly which felt like a good omen of what’s to come ✨❤️ wishing you all a year of nourishment, ease & loads of love 💋 by @galetteprincess

there is a LOT of “health” noise out there rn - between the urge to constantly monitor our health with oura rings & Apple Watches to the protein popcorns and dense bean salads.. I truly feel like everywhere I turn there’s some new health trend I’m being told to engage in.
I was an early adapter of diet culture - I’ve done the counting points, the tracking macros, the calories in/calories out until one day in my early 20s I made a complete commitment to myself to never do it again - to never diet, track, or restrict. it was liberating and terrifying. what came next was a loooong journey (that I’m still on) of figuring out what it means to truly take care of myself without restriction.
what does this oatmeal have to do it with it? well, instead of listening to the Instagram nutritionists, I’ve recently recommitted to an intention of listening to myself. what truly feels good in my body - what gives me energy, what comforts my heart when I need it, what feels like nourishment when nourishment could mean nutrition plus a hundred other things like connection, and culture, and yes, cravings, too. recently, I’ve loved a warm cup of oats in the morning. the gooey texture, the sweet maple, stewed apples (or in this case, mashed bananas), the warm milk. it cloaks me in warmth & softness during a time that can otherwise be cold & hard. so if you’ve made it this far I hope you get my point - which is to honor your body in a time where the world wants to commodify self distrust, is a radical & healing thing. by @galetteprincess
