hello everyone;p

wednesday was a BIG pork day!

we started the class by learning how to butcher a pork butt and then cut them into chunks and began to sear them for our braised pork dish for our next class.

from our previous class, we butchered our pork into a couple different cuts, the rack of ribs, loin, and a cut from both which was our pork chops

we trussed our loins and brushed a thin layer of spicy brown mustard before crusting them in spices that we toasted and ground up
(black peppercorn, coriander seeds, and fennel seeds)
and placed it into the oven to cook until about 130°F (factoring in carry over cooking time)

we had our pork chops sitting in a spiced brine already from the day before and pan seared them until desired color and temperature (also about 130°F)

using the leftover fat from the cooked chops we made a white wine and butter pan sauce to pair with it and topped it with freshly chopped parsley

our racks of ribs that we saved got rubbed down with a concoction of different spices and were smoked while we prepared our other dishes

the sides that accompanied our meats that day were a potato gratin,
which is made by thinly slicing our potatoes in a mandolin and layering them with warmed cream and grated parmesan and gruyère cheese and then placed into the oven until fork tender
& bacon and lentil salad dressed with a vinaigrette
which was made by cooking and draining the lentils and tossing them with our dressing and topping it off with fresh dill, parsley and bacon :)

we butchered pork for the first time in class yesterday! \(•w•)/

we separated the racks of ribs attached to the pork loins and made some juicy Schnitzels!

(and we saved the ribs to make some delicious smoked dry rub ribs for class today!!)

we also made a german potato salad that paired perfectly with our schnitzel:)

i showed the process of me pounding out a piece of pork loin under some parchment to get it nice and thin and even

we then seasoned it with salt & pepper and did a process of breading which was flour, then egg wash, and then panko bread crumbs

we shallow fried them until crispy golden brown and then finished up our potato salad by mixing the cooked and drained potatoes with our spicy brown mustard dressing and some crispy lardons and chive batons 🥔🌱🥓

hii ʕ·ᴥ·ʔ
my name is ally & welcome to my cooking page!
follow along with me on my culinary school journey and day to day cooking.
my artistic expression through food:p

today’s recipe is…
{Homemade Bolognese Sauce}

Ingredients
- 1 package of ground beef
- 1/2 large red onion (minced)
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/2 tsp cinnamon
- 1/2 tsp of cumin
- 1 small can of tomato paste
- salt & pepper to taste
- olive oil for cooking
and your choice of pasta :)
(i chose Bucatini)

1.) start off by heating up a large pot and add in your oil. then add your ground beef and season with salt and pepper.

2.) once ground beef is thoroughly cooked through, remove the cooked ground beef and set it aside. using the same pot, add more olive oil and start to sweat your red onions.

3.) Once your onions are tender and transparent, add in your garlic and other spices. Then add in the small can of tomato paste.

4.) after adding in the tomato paste and combining all of the ingredients in the pot, add either some of the left over pasta water to thicken the sauce or a bit of a stock of your choice and cook down to get your sauce to your desired consistency.

5.) lastly, turn off the heat on your sauce and add your cooked and drained pasta to your pot of sauce. Mix and serve and enjoy!!
top with some freshly grated parmigiano reggiano and a few sprigs of basil:))))
