Not so long ago I used to think that “fun” foods could only be “weekend” foods 😔 treats, candy and chocolate were only a “weekend” food, chips and unhealthy snacks could only be enjoyed on the weekend, and don’t even think of having pancakes or French toast on a random Wednesday because those were only meant for the... you get it 😭 But then I thought realistically and not about all the crazy food do’s and don’ts and actually started enjoying all foods on any day of the week and found myself not wanting to go crazy on the weekends - what an idea right!? 🤯 moral of the story: pancakes taste good any day of the week and for that matter any meal of the day 🙌🏻

Also... next time your craving pancakes these were pretty delish 👌🏼 this is the oatmeal pancakes from @thekitchn and I highly recommend them! by @gettinghealthywithjess

I wasn’t planning on posting this as it’s not a full recipe, rather something I threw together that sounded delicious, but then I remembered that not every meal is a specially crafted recipe and that’s what makes cooking fun! 👩🏻‍🍳 So enter this fully loaded breakfast flatbread with eggs, pesto, mixed greens, tomato, red pepper and feta 🤩 Inspired by my basil plant that has been growing like a weed, I knew I needed a recipe that would use up a large amount of what I have grown, and what better use than pesto! Enjoy the “recipe” I used for the pesto as I just kept throwing things into my food processor, this will also give you guys an idea of how my brain works when cooking 😂 recipes and measuring, who needs ‘em!?
🌱 Easy Vegan Pesto 🌱
A lot of basil (estimate 2C)
A few drizzles of olive oil throughout the food processor (more likely needed later while blending)
Juice of 1/2-ish of a lemon
Handful of walnuts
2 garlic cloves
Generous pinch of salt
Few cracks of black pepper by @gettinghealthywithjess

The other day I was craving some crispy, crunchy nuggets, so viola, this recipe was born! These little nuggets are salty and savory and oh so crispy with help from the crackers they are dipped in 👌🏼 I love using these as a protein element for a big salad but I’d be happy accompanying these with any array of dipping sauces 😋 one tip for your tofu game is to freeze it, then defrost it in the microwave and the water squeezes out like a sponge 😂 the tofu also has a little bit of a different texture and isn’t as delicate!

I got my chocolate-loving genes from my dad, so to honor that love I made him this delicious salted chocolate tart for Father’s Day and my dad had no complaints whatsoever, though I do have to say he’s my biggest hype man when it comes to cooking 🙌🏻 I was hoping the tart wouldn’t be too rich and this one did not disappoint! The saltiness of the crust balanced everything out perfectly and the filling was honestly so light and delicious 🤤 I highly recommend you check this recipe out from @gimmesomeoven and make sure to decorate the top with whatever you like, that part is sometimes the most fun 😋 by @gettinghealthywithjess

During times of stress and uncertainty when I can’t quite wrap my head around what’s happening in our world I often times turn to baking, there’s something about the scientific process that strangely soothes my mind 💆🏻‍♀️ ever since I was a little girl the baking recipe I would go to is the classic chocolate chip cookie and it’s been my all-time favorite ever since 🍪 a little reminder that it’s a-okay to not be okay, but it can also be helpful to find what coping mechanism works for you!
SWIPE ➡️ for one of my favorite vegan chocolate chip cookie recipes, they are sweet and chewy but perfectly soft ☁️ I’ve also been loving freezing some dough for quick baking when my sweet tooth starts calling ☎️ by @gettinghealthywithjess

Honestly wishing I could hit repeat on this falafel bowl but they were so darn tasty my family gobbled them all up with zero trace of leftovers in sight, and I can’t blame them 😋 as much as I wanted this bowl to take me back to my travels in Greece, nothing can beat the experience of being there 😔 but a close second with these homemade falafels that are extra special as they have an extra veggie boost of some spinach loaded in there, and I made some homemade Greek yogurt tzatziki sauce to go with them, I mean c’mon, what could be better 🤤 if your mouth is not watering yet take a look at the recipes and see for yourself 🥵

Pretty in pink are these delish strawberry-rhubarb oat bars 🤪 my go-to summer flavors are strawberry and rhubarb, there’s something about the tart rhubarb and the fresh local strawberries that make for a *chefs kiss* culinary masterpiece 🤤 what I love about these oatmeal bars is that they are only lightly sweetened so I totally recommend indulging as early as breakfast if your heart desires 💕

Hello friends 🤗 what a week of exploration, education and intentionality it has been. Like many people I will be transitioning back into food content after taking some much needed time to educate myself on how I can continue the fight for black lives ✊🏾✊🏿✊🏽 while continuing my regular feed I am going to make it a priority of mine to uplift black businesses and bloggers in relation to food, health and wellness. This is only a small step, but it’s something that I believe is important, especially as we continue to work towards justice and equality. Please, don’t forget the fight is not over, we have to keep pushing forward, keep educating ourselves, keep having difficult conversations, keep donating, signing petitions and questioning anyone who tells you it’s not important to do so 👏🏼

I’ve been loving this warmer weather but still working on getting used to it with the help of this chocolate mousse 🍫 it’s rich, creamy and so decadent 🤤 if you’re not sold on it yet then maybe knowing it’s made with avocado will get you? 🥴 despite a weird ingredient this mousse does not disappoint 🤩 make sure your 🥑 and 🍌 are completely frozen if you want to eat this right after making it, if you’re into waiting, which will be hard with this one, you could leave it in the freezer for longer for a more ice cream like texture 🤤

Like many people these snack plates have been a lifesaver lately 🙌🏻 I’ve been feeling a little burnt out from cooking and haven’t really felt like making anything too fancy, so enter in this snack plate 😍 perfect for when I can’t decide what to make since I get to have a little bit of everything 😋 I think my favorite part is choosing how to organize everything to fit on the plate neatly 😂 details below!
From L-R: Apple slices, cucumbers, strawberries, bell peppers, carrots, crackers and pretzels, a little goat cheese with some blackberry jam on a cracker (me and my boyfriends favorite ending snack/sweet addition to the plate 🤤)
Bowls: natural PB and some hummus! by @gettinghealthywithjess

Decided to do something a little different for today's post 🙊 I realized that I haven't ever really formally introduced myself on here, and I decided to change that up! So, Hi everyone! My name is Jessica or most people call me Jess, and here are 5 facts about me!
1️⃣ If you can’t tell from the photo, I love a good cup of coffee ☕️ when I’m at home I normally drink it black, but when I go out I love to dress it up a little bit, hello caramel macchiato or a miel (honey&cinnamon) are my favorites 🤩
2️⃣ I study Nutrition & Dietetics and only have one more year before my internship. #RD2BE 🎉
3️⃣ I’m a chocoholic, I admit. Big fan of dark chocolate, not so much milk chocolate though. 🍫
4️⃣ I never would have imagined I would be studying Nutrition, I’ve always been a foodie but not always the healthy or balanced kind, ya know? As a young kid my dream job was to become a vet! 🐶
5️⃣ I’m a born and raised Michigander and proud of it, but I do admit I’ve got an itch to explore some other places, especially somewhere with some mountains. 🏔

Now that you've heard a few things about me, I’d love to get to know you guys better! Comment your go-to coffee order below or any random fact for that matter 🤪 by @gettinghealthywithjess
