Banana Almond Flour Waffles or Pancakes 

Naturally sweetened, gluten-free waffles that are soft and fluffy and the same batter works for pancakes too. 🥞🤎

1 ripe banana 
1/4 milk of choice 
2 eggs
1/4 cup maple syrup
1 1/2 tsp vanilla extract
1/2 cup arrowroot starch
1 1/2 cups almond flour
1 tbsp baking powder
1/4 cup refined coconut oil, melted
Pinch of salt

Mash the banana, then whisk in the remaining ingredients until combined. Or add everything to a blender and blend until smooth. If batter is too thick, add more milk.

Cook in a preheated waffle iron until golden brown. For pancakes, cook on a lightly greased skillet over medium/low heat until golden on both sides.
Paleo baking tip: cook low and slow - these won’t bubble as much as traditional pancakes, so watch for the edges to set before flipping.

Turkey zucchini lasagna with spinach + cottage cheese

Zucchini:
3–4 large zucchinis
Sea salt

Turkey filling:
2 tbsp avocado oil
1 medium onion, diced
3–4 garlic cloves, minced
1 1/2 lbs ground turkey
1 1/2 cups thick marinara
3–4 tbsp chopped fresh basil
Salt + pepper

Spinach:
8 oz baby spinach
Drizzle of oil
Pinch of salt
Squeeze of lemon

Cheese:
16 oz thick-style cottage cheese
1 cup grated Parmesan
2 cups shredded mozzarella

Preheat oven to 375°F. Use an 8x12-inch baking dish.

Slice zucchini lengthwise into thin strips, lay on paper towels, lightly salt and let sit while you prep everything else. Blot well as moisture releases.

Sauté onion in oil over medium heat 1–2 mins. Add turkey and cook through. Add garlic for 30 seconds, then stir in marinara + basil. Season and set aside.

If cottage cheese is watery, drain in a fine-mesh sieve over a bowl for 30–60 mins. Pulse until ricotta-like, then stir in 1/2 cup Parmesan.

Sauté spinach until wilted. Add lemon, then squeeze/drain out excess liquid.

Divide meat sauce, cottage cheese mixture + spinach into 2 portions. Divide mozzarella into 3.

Layer:
Zucchini
1/2 meat sauce
1/2 cottage cheese mixture
1/2 spinach
1/3 mozzarella

Repeat once.

Top with final zucchini layer, remaining mozzarella + remaining 1/2 cup Parmesan.

Bake uncovered 30–35 mins until bubbling and golden. Rest 10–15 mins before slicing.

Tip: Removing excess moisture from the zucchini, spinach + cottage cheese is key to avoiding watery lasagna. Blot any excess liquid before serving if needed.

Double Chocolate Banana Bread 🍌🍫

3 ripe bananas
1/4 cup maple syrup
1 teaspoon vanilla
2 eggs
1/4 cup coconut oil
1 3/4 cups almond flour
1/4 cup cocoa powder
1/4 cup arrowroot
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon instant coffee or espresso powder
1 cup chocolate chips, or more 😉
(plus 1/4 cup to sprinkle on top)

Preheat oven to 350°F and line a loaf pan with parchment paper.
In a large bowl, mash the bananas. Whisk in maple syrup, vanilla, eggs, and coconut oil.
Then mix in almond flour, cocoa powder, arrowroot, baking powder, baking soda, salt, and instant coffee.
Stir until just combined.
Fold in chocolate chips.

Pour batter into loaf pan and spread. Sprinkle remaining chocolate chips on top.
Bake 45 to 55 minutes
Tips: Almond flour and gluten-free loaves can take a little longer to bake. A few moist crumbs on your toothpick are okay, you're looking for no wet batter. Let the loaf cool before slicing so the center has time to fully set.

Strawberries & Cream Popsicles 🍓

1 cup fresh strawberries, hulled 
1/2 can (about 7 oz) coconut cream, using both the cream and liquid
1/2 cup unsweetened yogurt
1/4 cup maple syrup
1/2 tsp vanilla extract
1 tsp cashew butter (or almond butter)
Pinch of sea salt
Optional: collagen peptides or protein powder 

Blend all ingredients until smooth and creamy.
Taste and adjust sweetness if needed
Pour into 6 popsicle molds
Freeze for at least 6 hours or overnight until fully set 
Save remaining coconut cream for smoothies or soups... enjoy! 💕

One-Pot Coconut Rice with Chicken

Ingredients
6- 8 boneless, skinless chicken thighs, trimmed of any fat
1 tbsp avocado oil 
3 garlic cloves, minced
2 tsp fresh ginger, grated
1 cup jasmine or basmati rice, rinsed 
1 can full-fat coconut cream
1 cup chicken broth 
1 tbsp soy sauce or coconut aminos
1/2 tsp ground turmeric
1 tbsp paprika
Salt and pepper to taste
1 cup frozen peas and carrots

Optional: top with lime juice and green onions

Preheat oven to 350°F.
Pat chicken dry and season both sides with paprika, salt, and pepper.

Heat oil in a large oven-safe pot or Dutch oven over medium heat. Sear chicken 2–3 mins per side until lightly golden, not cooking it through. Transfer to a plate.

In the same pot, add garlic and ginger, and sauté for 30 seconds 

Pour in coconut milk, broth, turmeric, coconut aminos, and rinsed rice, scraping up anything from the bottom. 

Nestle the chicken back on top of the rice in a single layer. Bring just to a gentle simmer, cover, and transfer to the oven. 

Bake for 22–25 minutes, until the rice is tender and the chicken is cooked through.

Remove from the oven, immediately sprinkle the frozen peas and carrots evenly over the top. Cover with the lid and let sit for 5 mins. 

Top with green onions and lime juice...enjoy!💕

Almond Four Chocolate Chip Banana Bread 🤎

1 3/4 cups almond flour
1/4 cup arrowroot
3 large ripe bananas, mashed
1/2 cup peanut or almond butter
2 eggs
1/3 cup coconut sugar
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup coconut oil, melted
1 cup chocolate chips

Preheat oven to 350°F. Grease or line a loaf pan with parchment paper.

In a large bowl, mash the bananas and whisk in nut butter, eggs, vanilla, and melted coconut oil. 

Add almond flour, coconut sugar, arrowroot, baking powder, baking soda, salt, and cinnamon. Stir until just combined.

Fold in the chocolate chips.

Pour batter into the prepared loaf pan and bake for about 55 - 60 minutes, or until a toothpick inserted in the center comes out relatively clean.

Tips: Almond flour and gluten-free loaves can take a little longer to bake. A few moist crumbs on your toothpick are okay, you’re looking for no wet batter. Let the loaf cool before slicing so the center has time to fully set.

Did a Disney day with my son, his girlfriend, and my boyfriend. Making memories at Disneyland with my son is something we've been doing since he was little, and it still means so much to share these moments with him now that he is grown. But forever my baby lol

Chocolate-Covered Stuffed Dates 
Naturally sweet, simple, great for gifting, holidays, or a healthy sweet treat! 

Ingredients:
Medjool dates, pitted
Dark and/or milk chocolate chip, melted
Flaky sea salt

For fillings:
Peanut Butter – creamy peanut butter & roasted peanuts. 

Pistachio – blend 1/2 cup salt free pistachios, 1 - 2 tbsp coconut oil and a pinch of salt. Top whole pistachios

Coconut – blend 1/2 cup shredded coconut, 1-2 tbsp maple syrup and pinch of salt.
Toast some coconut for sprinkling on top

Almond – almond or cashew butter, plus sliced or chopped almonds.

Instructions:
Slice open each date and remove the pit.

Fill with your choice of fillings then freeze till firm. 

Dip or spoon chocolate over the filled dates

Top with nuts, coconut, and a sprinkle of flaky salt

Chill again until chocolate sets.

These keep well in the fridge or freezer...enjoy!

Moist, fluffy, and naturally sweetened, these banana nut muffins are gluten-free, dairy-free, paleo, and so good! 

Ingredients:
1 3/4 cup almond flour
1/4 cup arrowroot starch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
3 ripe bananas, mashed (about 1 cup)
1/4 cup almond butter (or any nut butter)
2 eggs
1/3 cup coconut sugar
1/4 cup melted coconut oil
1 tsp vanilla extract
1/2 cup chopped walnuts (plus extra for topping, optional)

Preheat oven to 350°F and line a muffin tin with 12 liners.

Mash bananas, add to a bowl with all other ingredients and whisk. 

Scoop batter into the muffin tin, filling about 3/4 full.

Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean and tops are golden.

Note: muffins made with almond flour don't rise as high as traditional ones, but they're extra moist and naturally sweet ✨
