Sometimes Mondays are a bit heavy. Today felt heavy. Not in a “i can’t even handle it kind of heavy” but in a “I got this, it’s just going to be a tiny bit slower than usual” kinda way. I guess my real point is: On Mondays, I sit down at the computer early and don’t really get up until later than I should. Suppers on Monday are usually lacking. I think a sad supper is a sad way to start the week. Tonight I decided to give dinner a real go… Taking my inspiration from Marley Mondays at our beloved @southern.soul.bbq (I will leave it to them to tell the origin story of the Marley. I’ll just say I had it the first time with a shot of whiskey at a happy hour in the village) I threw some super thick pork chops in the Insta pot with “must be something like this” jerk pork sauce seasoning and some Pineapple. Adding seasoned black beans, a quinoa rice mixture and a touch of sour cream to the steamed left over tortillas in the fridge brought us round to a damn good supper in about a half hour and only 1 after work cocktail. Monday feels lighter. Monday tastes better than it has in a long time. It’s gonna be a good week. #marleymonday #southernsoulbbq by @gingerselkie
