✨Coffee with Goonfed on a Sunday✨

So normally Mondays are last day off before starting my work week, but I work tomorrow so today’s my day to get as much done as I can to prepare for a successful week!

Lately there have been a few additional stressors thrown my way (happens amiright) so today I’m choosing to focus on the positive and be extra grateful for the people who have continued to show up, and for the things that I do have. I’m healthy and able. I have a family and a husband and 3 dogs and a bunch of friends who love me. I have a career. I have a home to live in and a car to take me places. I’ll continue to grow that list throughout the day buttttt that’s enough of thatttt.

By no means am I barista, but here’s what Goonfed is having! Hope y’all have an amazing Sunday.

✨Black coffee
✨Coconut milk
✨Half & half (I prefer heavy cream)
✨Liquid stevia
✨Ground cinnamon
✨Sugar free salted caramel syrup

Meal prep with me on a Monday!

As many of you know, my full time gig is as a registered nurse. Currently I’m in an outpatient surgery center which is super rad, and I’m able to work Tuesday-Friday most weeks! I’ll typically meal prep for the week on either Sundays and/or Mondays. Here’s what I made for lunches this week:

Proteins:
•Grilled wild caught salmon with skin on
•Sous vide sliced chicken breast

Vegetable stir fry:
•Kale
•Spinach
•Cabbage
•Celery
•Red onion
•Zucchini
•Garlic
•Lemon juice

Side:
•Cauliflower rice

Most of my meals are relatively clean, so my hope is to help y’all out with some fun & fresh meal ideas!

Hey y’all, it’s been a minute! Got a wild hair and decided to post my first reel. Tonight’s star was some shredded beef courtesy of the Instant Pot. (If you don’t have an instant pot, RUN AND GET ONE LIKE NOW!)

We purchased half a steer about a year ago (also highly recommended if you eat beef regularly), and the chuck roast was one of the last cuts we had in the freezer.

Anywho, enjoy my cheesy/poorly made reel of some freaking delicious shredded beef tacos!

What’s up FAMM!? It’s been a minute! As many of you may know, it’s mah man meat’s birthday today! Bonus points if you know what that also means… it’s our THIRTEEN YEAR ANNIVERSARY! Yup, 13 years ago, @raffsencion took me by the hand on his 18th birthday and asked me to be his girlfriend. Boy, has it been a wild ride. And I wouldn’t change any of it! Raff, it’s an honor to be your best friend and your wife. I am so glad you like (or at least pretend to like) all the foods I make! 😆 cheers to 31 and 13. #celebrationdinner #feastforaking #gooncouple #lowandslow #goonsinthekitchen #happybirthday #happyanniversary #aintnorecipes #goonsagainsttheworld #hardworkandgoodtimes by @goonfed

DISCLAIMER: not a food post! Here’s some Friday feelz for y’all.

Recently, I left bedside nursing after working in the the same department at the same hospital for almost 7 years. It was a really emotional decision. Change is hard. It’s not always pretty and by no means is it comfortable. The feeling of complacency was slowly killing me, and I needed to place myself in uncomfortable situations in order to change and ultimately grow.

As of today, I’ve completed 4 weeks in my new full time nursing position in the OR. I’ll be the first to admit that I am for once proud of myself for taking this leap, even though I felt so blind as to what was on the other side for me.

This transition has taught me so much about myself, and has highlighted just how fortunate I am to have all the support around me that I do. I look forward to learning something new every day and am truly grateful.

Being GOONFED gives me the opportunity to be creative, try new things in the kitchen, and just relax. Thank y’all for being a part of my journey!

Brunch pizzas? YES, PLEASE! One reason I don’t typically like following recipes is so I can be as creative as I want when making food! Also, I don’t like following the rules. 😏 #breakfastpizza #aintnorecipes #makefoodfun #brunchsquad #meatandveggies #wholefoods #goonbabeswhocook #lowandslow #goonsinthekitchen #damngoonfood #hangovercure by @goonfed

First time making chile verde, and definitely not the last! Shiva says it smells, like, really good.

Honestly, this was too 🔥 not to share. Been a little MIA but... 2020 amiright? Most of you know I’m a full time bedside nurse, so things have been a little wild all around. It’s also wildfire season, which impacts Casa Sencion, as my husband works for CalFire. Been keeping prep fairly simple recently, but both of us are off from work (a rare occasion) and decided to get after it in the kitchen! 10/10 would recommend.

After the gym this morning, I started making albondigas soup. My husband texted me to tell me he was going for a quick store run. By the time I got to my phone to ask him to grab some tortillas, he was already checking out but mentioned that he got some tortilla chips. SQUIRREL! I guess I tend to get a little ADHD in the kitchen. Somehow decided I wanted nachos and breakfast at the same time. So I made that. Follow your dreams, y’all. P.S. also get you a mans who surprises you with a tallie Michelada just because.

HAPPY FIRST OF JUNE YA’LL! I got two days off, so you know what that means! I’ll be spending most of my time in the kitchen, in the gym, and in the sun. Side note: if you’re looking for a new challenge, check out @goonsagainsttheworld for a unique way to honor the deserving. Remember to wash your hands, keep your distance (when possible), check in on your friends and family, and be kind to one another! It’s the goon way.

You can’t tell in this picture, but these plates are actually 6 feet apart from each other. Family and whiskey and wine and #damngoonfood was just what I needed.
