In these rare moments of calmness, this is what you will see: jars of things in various stages of becoming, handwritten and often misspelled labels that you can barely read , ingredients being pulled out of the jars to be tested, tasted and tested again. Essentially, a flavour lab that probably makes very little sense if you walk in without context.

Ground Up is run by a chef with particular penchant towards “messing around and finding out” and a team that more than happy to follow her down various rabbit holes. Templates don’t exist in this wonderland.
And since templates don’t exist here, everything starts with research. Research involves getting to know an ingredient intimately, understanding a technique inside out, and putting both through various tests until you happen upon that little “aha” moment.

Our misos are probably the best example of this.

It started with research about the fermentation technique in Japan. @gdesai89 studied the techniqiue through and through. But then she stopped there.
She asked herself: what if we were to play around with one of its core ingredients - the soybean. What if we swapped it for, say, the most buttery black bean? Or the GI-tagged white bean from Maharashtra?

And that’s how our non-traditional misos came to be.
We do sometimes wonder how the Japanese would react if we ever sold these misos in Japan.

And this spirit of experimentation, extends beyond miso and goes far into preserving wild foods, chillies, vinegars, smoked thing by @gorkeypatwal

Nearly 400 years back, port regions like Mundra in Kutch had wild plantations of fruiting date palm thanks to the entrepot Kutchi ports from where sailors, wanderers, porters, peddlars, and traders floating between West Asia and Western India threw
the pits of their chewed dates. Without anybody caring for it,wild plantations of Phoenix dactylifera, not native to India, grew alongside sugar/wild date palm Phoenix sylvestris of the land.
Until 1947, under the British, India was the fifth largest producer of date fruit before much of the Thar desert and Rann of Kutch.

Date palm is not completely new to India. In fact, Phoenix sylvestris or wild date palm is native to the Indian subcontinent and grows in the wild from Kutch to Bengal and Uttar Pradesh to Kanyakumari. Again, commercial date palm/fruiting date palm as a plantation in India is also wholly not new to the country. Alongside wild varieties, in Kutch and Thar many fruit date palms have been growing in the wild for nearly 400 years. by @gorkeypatwal
