There’s never been a more exciting time to be a foodie and I am here for it.

I’m not saying processed food and pesticides are the only reasons those health challenges exist, but we do know they are contributors. And that’s great news, because we can do something about it! We can choose whole food over processed, we can source our produce well or clean it before we eat it.

And how incredible is it to see that some of the things our families did for generations are traditions that support our health? I love talking about this stuff, stick around if you do too!

minimally processed oat milk, the ingredients should be organic oats & water - prebiotics
pear - pectin for prebiotics & fiber, + quercetin!

walnuts - fiber & butyrate production
All together, it gets you about 20g of protein and 7g of fiber.

Pear Cardamom Overnight Oats
makes 4 jars

For the oats:
2 cups rolled or steel cut oats
1 cup oat milk
1/2 tsp cinnamon
1/2 tsp salt
2 scoops vanilla bone broth protein powder of choice - I use equip

For the pears:
2 pears
1 tsp cinnamon
1/4 tsp cardamom
1/4 tsp salt
2 tbsp maple syrup

For the cinnamon walnut granola:
makes about 3 1/2 cups
2 1/2 cups oats
1 cup walnuts
3 tbsp coconut oil
3 tbsp maple syrup
1 1/2 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg

Add oats, milk, spices & protein powder to a bowl and whisk until thoroughly mixed. Divide equally into 4 containers large enough to hold the oats + the toppings you’ll add later. Let chill in the fridge.

Chop pears into small pieces, add to a saucepan with maple syrup, cinnamon, cardamom & salt. Heat over med low heat until the pears start to release their juices and break down - 5-10 minutes.

Mix together the granola ingredients in a large bowl. Spread onto parchment paper on a baking sheet and bake at 300 for about 20-25 minutes. I like to stir them once in the middle of baking.

When ready to eat, top your oats with pear & granola.

Enjoy!

Anyone else trying to be as intentional as possible with their lunch breaks? Tell me what you do!

I didn’t think I could learn to like new foods, but I was wrong! The two things that helped me the most:

Learning what different foods did for my body. Understanding how they help my body function well or not so well was a game changer!

Making small changes. I didn’t go from butter noodles to sardines all in a few weeks - tbh I’m still on the fence about sardines. But I started adding one or two new things to my plate regularly until I enjoyed them, and then added more.

If I did it, you can too. And life’s more fun when you enjoy eating lots of fun foods!

Of course I don’t mean we should NEVER be comfortable, but I do mean that challenge is a vital part of being human that culture encourages us to avoid. But avoiding discomfort & challenge diminishes our opportunity for growth - and I for one am not interested in staying stagnant. What about you?

minimally processed oat milk, the ingredients should be organic oats & water - prebiotics
apple - pectin for prebiotics & fiber, + antioxidants!
warming spices - anti-inflammatory
bone broth protein powder - glutamine & collagen that support the gut lining

And all together, it is gluten & dairy free and gets you about 19g of protein and 8g of fiber.

Stewed Apple Cinnamon Overnight Oats
makes 4 jars

For the oats:
2 cups rolled or steel cut oats
2 cups oat milk
1/3 cup apple butter
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
2 scoops vanilla bone broth protein powder of choice - I use @equipfoods

For the apples:
2 apples
1/2 tsp cinnamon
1/4 tsp salt
2 tbsp maple syrup

For the pumpkin seeds:
1/2 cup pumpkin seeds
1 tbsp maple syrup
1/2 tsp molasses

Add oats, milk, apple butter, spices & protein powder to a bowl and whisk until thoroughly mixed. Divide equally into 4 containers large enough to hold the oats + the toppings you’ll add later. Let chill in the fridge.

Chop apples into small pieces, add to a saucepan with maple syrup, cinnamon & salt. Heat over med low heat until the apples start to release their juices and break down - 5-10 minutes.

Toss the pumpkin seeds in maple syrup & molasses. Spread onto parchment paper on a baking sheet and bake at 350 for about 15 minutes. I like to stir them once in the middle of baking. This make enough that you’ll have extra, I add about a tsp as a topper.

When ready to eat, top your oats with apple & a few pumpkin seeds.

Enjoy!
