The only fireworks I’m worried about this weekend are the ones coming off Grammy’s grill. 🇺🇸💥

Jersey shore summer essentials: a turkey sub that’s bigger than your head (shoutout @lennys__colonialranch ) Grammy’s macaroni salad that somehow tastes better outside, grilled clams fresh off the fire… and a three-year-old who apparently skipped chicken nuggets and went straight to shellfish. 😂🦪

There’s something about a pot of soup on the stove on a cold rainy day, that just slows everything down.

This batch was especially meaningful. Growing up, my dad was that guy after the holidays, turning whatever was leftover into something always memorable. Leftover ham? Somehow it became the best split pea soup you’ve ever had. No recipe, just instinct, and measuring with your heart.

I tried to channel that today with this smoky ham split pea soup. And honestly, it was bussin (as the kiddos say). Not just because it came out good, but because it reminded me how much of him is still with me in moments like this.

Cooking has quietly become therapy for me. It’s one of the few things that makes me feel close to my dad these days. Alzheimer’s has taken a lot, including his time in the kitchen, but it hasn’t taken the impact his cooking has had on me.

Even if you can’t cook anymore, I’ve got it from here, Dad 🤍

Masters Sunday is always one of the most magical days of the year. ⛳️

Whipped up my annual fresh batch of pimento cheese dip. This year I roasted and jarred my own “pimentos”. Creamy, a little sharp, just enough kick, and never yields enough to last through the day.

There’s something about good food, a slow Sunday, and the Masters on in the background that just feels right.

POV: You’re pulling into the diner after spending the past 2+ hours shoveling out of 2 feet of snow. Admittedly, as I trekked toward the restaurant, I was already tasting the spicy, tangy buffalo sauce in my head… and as I’m pulling into the parking lot I get the notification that no big-back like myself ever wants to read:

“Yeahhh your order was cancelled fam. We’re actually closed. Blizzard.” ❄️ (or in my head it read something like that.

So anyway… here’s my homemade buffalo chicken wrap.

Was I emotionally prepared to cook? No.
Did I already commit to my wife and I’s craving? Absolutely.
Did I dramatically sigh and throw an adult sized temper tantrum while turning the car around? 100%.

But listen… crispy chicken, extra buffalo sauce, shredded lettuce, a heavy hand with the blue cheese dressing and fresh and funky blue cheese crumbles (measured with my hungry heart), wrapped up tight like it was bracing for a north eastern bomb cyclone, and suddenly we’re not acting like a gigantic baby anymore.

Sometimes life cancels your takeout order and forces you to discover you are, in fact, the diner.

It be like that sometimes…

Proof that comfort food doesn’t have to take all day
These Instant Pot carnitas came out ridiculously tender, finished with a quick broil for that crispy edge, and tucked into warm tortillas like they belong. 🌮

Cooked 2.5 lbs of pork tenderloin rubbed in cumin, oregano, chili powder, garlic, onion powder, and paprika. Pressure cooked the pork in about a half a cup of pineapple juice for added flavor. High pressure for 30 mins and the let natural release. Finished the carnitas in the oven on a sheet pan 15 mins at 450 degrees for some added flavor and texture.
