Classic cocktail structures give us a baseline for balance, but the real magic happens when you treat those specs as a foundation to paint something entirely your own.

Behind the bar at @arquetrestaurant in San Francisco’s Ferry Building, Galib Shishir isn’t just executing standard templates; he is channeling raw personal history. Growing up in Bangladesh—a country with no alcohol culture—his early palate wasn’t shaped by textbook European bar manuals. It was built on the distinct culinary profiles of his heritage: subcontinental bitter melon, fresh-grated turmeric, Thai chilies, and the intense, savory depth of coastal fish sauce.

When you bring that level of personal memory to a blank canvas, a cocktail program stops being a checklist of standard builds and becomes an act of genuine creativity. It proves that when your commitment to structural balance is absolute, you can introduce the most unexpected elements of your own culture and the floor will follow your imagination anywhere.
