Where autumn paints the mountains gold, a massive waterfall roars through the wilderness, and black bears still roam the shadows… the Catskills remind you that some places aren’t meant to be tamed—only explored. 🍂🐻‍❄️💦🏔️ #Catskills #CatskillFalls #AutumnInTheCatskills #FallFoliage #wildnewyork taken in Kaaterskill Falls by @gucciardo

🍂 Autumn mornings at John Boyd Thacher State Park 🍁

Crisp air, colorful leaves, quiet trails, and views that remind you to slow down and appreciate where you are. There’s something special about watching the seasons change—especially when you’re surrounded by Mother Nature. 🌄🍁

Grateful for mornings like this. The kind that clear your mind, fill your soul, and make you appreciate the journey.

“ As autumn paints the forest in gold, a mother black bear prepares her cubs for the long winter ahead. In the quiet embrace of Mother Nature, she teaches them that survival is instinct, family is everything, and even the wild must find its time to rest. Soon, the forest will sleep beneath a blanket of snow, and together they’ll wait for spring.” 🐻🍂 #grizzlybear #blackbears #brownbears #instagram #instadaily by @gucciardo

Was in the grocery store today and some girl and her husband asked me how that Eggplant parm I made last night was… it’s not perfect but edible !!!
🇮🇹🇺🇸 GUCCIARDO CHICKEN PARM 🇺🇸🇮🇹

Organic chicken breast, Italian-style panko breadcrumbs, San Marzano tomato sauce, fresh tomatoes, and plenty of fresh mozzarella. 🍅🧀🌿

Prep Time: 20 minutes
Cook Time: 35 minutes
Serves: 4–6

🔥 HOW I MADE IT:

1. Pound organic chicken breasts to an even thickness.
2. Season with salt, pepper, garlic and Italian seasoning.
3. Coat in flour, egg, then Italian panko breadcrumbs.
4. Pan-fry until golden and crispy.
5. Layer in a baking dish with San Marzano sauce and fresh tomatoes.
6. Cover with fresh mozzarella and a little Parmesan.
7. Bake at 425°F for about 20–25 minutes, until the chicken is cooked through and the cheese is melted and bubbling.
8. Finish with fresh basil and let it rest a few minutes before serving.

Crispy chicken. San Marzano sauce. Fresh mozzarella. Italian-American comfort food. 🇮🇹🇺🇸

Good food. Good people. Great times.

🍆🇮🇹🇺🇸 GUCCIARDO’S ITALIAN-AMERICAN EGGPLANT BAKE 🇺🇸🇮🇹

Fresh, simple, and straight from the garden. 👇

🍆 Sliced eggplant
🍅 Fresh local farm tomatoes
🌿 Fresh basil from the garden
🧄 Fresh garlic
🧅 Chopped onions
🍅 San Marzano tomato sauce
🍅 Sliced tomatoes
🧀 Fresh mozzarella

How to make it:
Slice the eggplant and tomatoes. Chop up the garlic and onions. Layer everything together with the San Marzano sauce, fresh basil, and plenty of fresh mozzarella. Drizzle a little olive oil over the top, season it up, and throw it in the oven at 400°F for about 35 minutes until the cheese is melted, bubbling, and golden.

Then pull it out, let it sit for a few minutes… and EAT! 😂🔥

No fancy ingredients. No complicated recipe. Just fresh food, good sauce, melted cheese, and a little Italian-American love. 🇮🇹🇺🇸

“From the garden to the oven… from the oven straight to the table. THAT’S GUCCIARDO.” 🍆🔥🇮🇹🇺🇸 taken in Saratoga Springs, New York by @gucciardo
