The secret to a French twist that actually stays? 
It’s all about the “down and under” motion with your pins.

THE METHOD-

The Prep: Pull your hair into a low ponytail. Slide your hand out a couple of inches to leave some slack between your head and your grip. 

The Twist: Use two fingers from your free hand to grab that empty space and twist straight up. The ponytail will naturally feed into the roll. Tuck the ends under the twist.

The Lock: Grab a curved pin. Place it at the outside edge of the roll, push down to catch the hair, and then scoop it under the bun.

Repeat: Work your way from the bottom up using 2 to 3 pins total.

If I can bake real baguettes at home, so can you. It takes some practice, but don’t we all want a good analog activity these days?

My favorite routine is to prep the dough the night before, let it cold-proof in the fridge overnight, and bake first thing on a quiet morning at home. It’s become second nature, and there is nothing better than fresh bread whenever you want it. Just make sure you have some excellent French butter on hand to enjoy it properly (I love Les Prés Salés La Camargue, which you can find at Whole Foods).

My baguettes still aren’t flawless, but I don’t mind—it’s a skill you just keep improving over time. Here is the recipe and some tips I think will be helpful if you wanna give it a try:

The Ingredients
* 3 ½ cups All-Purpose Flour
* 1 ½ cups + 1 Tbsp warm water
* 2 tsp fine salt
* 1 tsp instant yeast 
* 1 Âź Tbsp honey

The Method
The Night Before:
1. Mix & Rest: Mix all ingredients in a bowl, cover, and let rest for 15 minutes.
2. Stretch & Fold: Over the next 1.5 hours, do 3 sets of stretch-and-folds, flipping the dough upside down after each set.
3. Overnight Rise: Cover the bowl tightly and refrigerate for 12–14 hours.

The Morning Of: 
4. Divide: Turn the dough onto a lightly floured surface. Divide into 3 equal parts, shape into rectangles, cover, and let rest for 30–45 minutes. 
5. Shape: Fold each rectangle into a cylinder, pinching the seams down the middle. Roll and stretch gently until they are about 14–15 inches long. Make sure to tuck and taper the ends or they will  look weird!

6. Final Proof: Place seam-side up on a floured couche. Cover and proof at room temp for 30–60 minutes. 

7. Prep the Oven: Preheat your oven to 500°F. Place a pan filled with hot water on the bottom rack for steam. 

8. Score & Bake: Transfer baguettes to parchment paper or the baguette pan, seam-side down. Using a sharp bread lame or razor, make 3 scores on each. Then drop the oven temp to 475°F, and bake for 15 minutes. 

9. The Finish: Carefully remove the water pan, rotate the baguettes, drop the temperature to 450°F, and bake for another 15 minutes until deep golden brown. Keep an eye on it early—every oven lies. by @haleybond

I hate to tell you this but, you’re probably storing your veggies wrong (part II). After another great market haul, I looked up how to maximize late-spring veggies— here you go!

•  Parsley – Trim the stems and store them upright in a jar of water.
•  Cucumbers – Believe it or not, they hate the cold. Storing them in the fridge makes them mushy. Keep them on the counter at room temp, out of a bag.
•  Garlic Scapes – Super low-maintenance. Just toss them into a dry cloth bag in the crisper drawer—they’ll last for weeks.
• Swiss Chard – Wash and thoroughly dry, then tuck into a dry cloth bag before placing it in the crisper. The cloth absorbs excess moisture so the leaves don’t get slimy.
•  Sugar Snap Peas – These love moisture but need air. Keep them in a perforated plastic bag or a container with the lid slightly cracked in the crisper drawer.
•  Apples – They emit a gas that makes everything around them spoil faster. Keep them in their own separate drawer, far away from your greens.
