Shakshuka 🍅🍳

A little tomato, a little spice, and eggs of comfort, simple ingredients, delicious magic. ❤️🍳

Ingredients

* 4 eggs
* 2 large tomatoes, finely chopped
* 1 medium onion, sliced
* 2–3 cloves garlic, minced
* 1 tbsp olive oil
* ½ tsp paprika
* ½ tsp cumin
* ¼ tsp chilli flakes (optional)
* Salt & black pepper, to taste
* Fresh coriander or parsley
* Optional: green chilli and a little feta cheese

Method

1. Heat olive oil in a pan and sauté the onions for 3–4 minutes until soft.
2. Add garlic and green chilli and cook for another minute.
3. Add chopped tomatoes, paprika, cumin, chilli flakes, salt and pepper.
4. Cook uncovered for 8–10 minutes, stirring occasionally, until the tomatoes become a thick, saucy mixture.
5. Make 4 little wells in the sauce and crack an egg into each one.
6. Cover the pan and cook for 5–7 minutes, until the egg whites are set but the yolks are still slightly runny.
7. Garnish with fresh coriander/parsley and a sprinkle of chilli flakes.
