Long weekend eats 🥲 by @hellomichelle.ca

Let’s roll into summer with this crunchy, yummy GF fresh roll🥟🥗 the perfect vessel to soak up your favourite sauce - I chose to make a creamy spicy peanut sauce (which can be swapped for almond).

Save this recipe for when you’re craving a light and fun to make summer dish 🍽️

For the filling you’re gonna need👇
~ Rice Paper
~ Butter Lettuce
~ Purple Cabbage (thinly sliced)
~ Red Peppers (thinly sliced)
~ Carrot Matchsticks
~ Green Onion (thinly sliced)
~ Fresh Mint
~ Cilantro
~ Cooked GF Vermicelli Noodles
~ Cooked protein of choice: Shrimp, tempeh, chicken to name a few!

For the dipping sauce you’re gonna need👇
~ 1/3 Cup Peanut Butter (or sub for Almond Butter)
~ 2 Tbsp Rice Wine Vinegar
~ 1 Tbsp Toasted Sesame Oil
~ 1 Tbsp Tamari (low sodium) or Coconut Aminos
~ 1 tsp Fresh Ginger Ginger, grated
~ 1-2 Garlic Cloves, minced
~ 2-3 tsp Sriracha
~ Sweeten to taste with raw honey (can sub for liquid stevia or monk fruit juice for a sugar free option)

^^add all sauce ingredients in a bowl, mix until combined and add warm water until desired consistency is reached!

Assemble👇

1. Soak one rice paper wrap in water delicately and saturate for 10-20 seconds and place on a damp paper towel on a cutting board for preparation. Make sure not to soak it too long or it will rip! You want it to feel pliable but not soggy.

2. Place a lettuce leaf down first and then put the rest of the veggies and herbs on top

3. Lay a fork full of vermicelli noodles on top of herbs and veg (sub for soba or konjac noods)

4. Add desired protein

5. Carefully roll the bottom of the rice paper over the filling, tuck, fold in the sides, and roll the rest like a burrito!

6. Cut in half and dip in the sauce and enjoy 😉

Sometimes you just gotta get your nacho on & treat yourself 🤠🌶️

Crunchy and satisfying, I used @quepasafoods and they also make a Grain-free Cassava chip that I’m going to try next time as a vessel for all this goodness👇

~ sharp cheddar 🧀
~ roasted bell peppers 🫑
~ roasted red onion 🧅
~ chopped tomatoes (flesh removed) 🍅
~ pickled jalapeños (a must!) 🌶️
~ seasoned (and spicy) protein of choice 💪

After baking add 👇
~ fresh green onion 🌱
~ cilantro 🍃
~ pickled jalapeño brine drizzle 🌶️
~ squeeze of fresh lime juice 🍋‍🟩
~ chopped avocado 🥑 with chilli flakes and smoked sea salt

*Hot CRUNCH Tip*💥
~ roast your veggies before topping to keep your nachos crunchy!
~ if you use grain-free chips, I would par bake them before topping to give extra crunch otherwise they can get soggy a little easier! by @hellomichelle.ca

Ode to the brownie🤎 5g of protein, 9g of fibre and less than 2g of sugar - she’s practically perfect. Developing gluten-free, grain-free recipes that are actually delicious is something I’ve mastered over the last 8 years and am so proud of. I’m currently navigating how to share these beloved bakes with you again - either cookbook, blog, CPG route, collaborating with another company, I’m considering it all!

Until then, I would love to share some brownies with ya and will be opening a very *limited* amount of local orders soon (pick up in the west end). DM me if you want the deets❣️ by @hellomichelle.ca
