I never set out to make something gluten free.
I just never put anything in it that didn’t belong there.

Real ingredients. Nothing you can’t pronounce. Every jar, every batch, made the way it’s supposed to be made.

This weekend I’m pulling up to two markets, including our first time at the Gluten Free Market. For once, you don’t have to read a single label. Every vendor. Every product. The whole market. Just show up and eat.

Could we make it easier? Yep. But easier isn’t the point.

Pre-shredded cheese often contains added starches or cellulose to keep the shreds from clumping together. Those coatings can also affect the way cheese melts. And when you’re making queso, that matters.

So we start with blocks of real cheese and shred it ourselves. More work for us. Fewer unnecessary ingredients. And queso that melts the way we want it to.
