In today’s utakula? He said Gweno,which is chicken in luo and I thought this is such a good opportunity to try and make dorowat,and so today we have an Ethiopian Kenyan interpretation of Doro Wat.
We didn’t have injera, so we went with good old rice and honestly, it worked beautifully!

For the chicken:
• Chicken
• Cooking oil
• ½ tsp cardamom sticks
• 4-5 cloves
• 3 large onions
• Fresh ginger & garlic
• Chicken stock
• Boiled eggs

Method:
I started by heating some oil with the cardamom sticks and cloves, then added the onions and cooked them down until soft and slightly pasty.
I added my homemade berbere spice (black pepper, turmeric, paprika, cinnamon, nutmeg and coriander),and Royco Chili Cube followed by the ginger and garlic.
Then I added the chicken and mixed everything together before adding some chicken stock.
Once the chicken was cooked through, I added the boiled eggs and let everything simmer together until all those flavours came together.
I’m not Ethiopian, so this is definitely my Kenyan interpretation but I’m VERY happy with how it turned out.

In today’s utakula? We have a classic…beef,ugali,skuma na avocado duuuh👀🥰

Beef recepie
-Marinate with black pepper ,salt and oil
-let it cook in a pan until brown,set aside.
-in the same pan add oil,whole cumin ,cardamom and a few cinnamon sticks (used my ancestors as the guide)
-add onions ,ginger and garlic paste,let that cook
-add Royco chilli flavour cube and Royco beef mchuzi mix
-add tomato paste,let that cook then follow with tomatoes
-let that cook completely then add your beef ,some water and cover to cook
-garnish with coriander ie dhania

You can serve with any starch of your choice .

Soft, fluffy mandazi with that lemony flavor 🤌🏾🍋

Save this recipe and try it!❤️

Ingredients

* 2 cups all-purpose flour
* 2 tsp yeast
* ½ tsp baking powder
* 2 tbsp oil
* ¼ cup sugar
* ½ tsp nutmeg
* 3 pinches salt
* Zest of 2 lemons
* Juice of 1 lemon
* Warm milk 1/2 cup

Method

1. Mix the flour, yeast, baking powder, sugar, nutmeg and salt.
2. Add the oil, lemon zest and lemon juice.
3. Add warm milk and knead the dough.
4. Cover and let it rise for 1 hour.
5. Roll out the dough cover for 30 mins
6. Cut into your desired shapes.
7. Fry in oil until golden brown and cooked through.

*make sure the oil isn’t too hot,cook in low-medium heat.

In today’s Utakula? we have…LOADED PLANTAIN FRIES 🍌🧀
Crispy, seasoned plantains layered with savoury beef, fresh kachumbari and melted mozzarella.

🍌 PLANTAIN FRIES

* Ripe plantains, sliced
* Royco Chili Flavour Seasoning Cube
* Black pepper
* Cinnamon
* Salt
* Oil for deep-frying

🥩 SEASONED BEEF

* Beef mince
* Onions
* Green bell peppers
* Royco Beef Flavour Cubes
* Roycomchuzi Mix Beef Flavour
* Black pepper

METHOD

1. Season the plantains with Royco Chili Flavour Seasoning Cube, black pepper, cinnamon and salt. Deep-fry until golden and crisp.
2. Cook the beef with onions, green bell peppers, Royco Beef Flavour Cubes, Royco Shuzi Mix Beef Flavour and black pepper.
3. Layer the plantain fries, beef, onions, kachumbari and mozzarella. Repeat the layers, finishing with cheese.
4. Microwave until the mozzarella is melted and stretchy.

Serve hot and enjoy! 🔥🧀
