📍Hyderabadi Paneer Masala 🌱🧀

Ingredients

For the ground paste
• 3 medium onions, sliced
• 2 green chillies
• 1 tbsp chopped ginger
• 1 tbsp chopped garlic
• A handful of fresh coriander leaves
• A handful of fresh mint leaves
• 10–12 cashew nuts

Whole spices
• 1 tsp fennel seeds
• 2 dry red chillies
• 1 bay leaf
• 2 green cardamom
• 1 small cinnamon stick
• 3–4 cloves

Masala & dairy
• ½ cup thick curd (yogurt)
• 2½–3 tsp Kashmiri chilli powder
• ½ tsp black pepper powder
• 1½ tsp coriander powder
• 1 tsp garam masala

Main & finishing
• 200–250 g paneer, cubed
• 2–3 tbsp oil or ghee
• Salt to taste
• Water as needed
• 2–3 tbsp fresh cream
• 1 tsp kasuri methi (crushed)
• Fresh coriander leaves (optional)

⸻

Instructions

Heat oil in a pan, add the sliced onions with a little salt and sauté until soft and lightly golden. Add green chillies, ginger, and garlic, sauté briefly, then let it cool. Grind this with coriander leaves, mint leaves, and cashew nuts into a smooth paste. In another pan, heat oil and add fennel seeds, dry red chillies, bay leaf, cardamom, cinnamon, and cloves, allowing them to release their aroma. Add the ground paste and cook on medium heat until well cooked and the oil starts separating. In a bowl, whisk the curd with Kashmiri chilli powder, pepper powder, coriander powder, and garam masala, then add this mixture to the cooked paste, stirring continuously. Cook until thick and glossy with oil splitting. Add a little water to adjust consistency, add paneer, and simmer gently. Stir in fresh cream, let it come to a soft boil, then finish with crushed kasuri methi and fresh coriander if desired.
