Nordic Sessions Trolltunga 🇳🇴

For this Nordic Session, we travelled to Trolltunga — one of Norway’s most iconic hikes. Led by our own @phillipmarques.no and guided by @paul_._noel @trolltunga_adventures , the journey became a way to introduce our guests to Norway through nature, movement, weather and endurance.

Trolltunga is not only about the view at the end. It is about the early start, the climb, the changing weather, the conversations on the trail and the feeling of reaching something together.
As we say in Norway: there is no bad weather, only bad clothes.

Sleeping in a @heimplanet brought us closer to the landscape — simple, functional and built for the Norwegian elements.

This is what Nordic Sessions means to us: creating cultural experiences that give our guests a deeper understanding of Norway through people, nature, craft and shared moments.

Nordic Sessions Knekkebrød 🇳🇴

For this Nordic Session, we spent time learning how to make knekkebrød — Norwegian crispbread.

Hosted by @savage.oslo and acclaimed chef @selvaggio95 , the session became a beautiful way to introduce our guests to Norwegian culture through something simple, honest and deeply connected to everyday life.

Knekkebrød is about grains, seeds, texture, patience and sharing at the table. It is humble, but it says a lot about Norway.

At Savage, we also explored how knekkebrød can become part of a refined Nordic pairing — served with Røros butter, @rossinicaviar and pristine Norwegian seafood.

We also loved sharing this experience with our Danish friends, from @rubycph @nimbcopenhagen @sircopenhagen

Together, we baked, tasted, learned and experienced how a simple Norwegian tradition can carry culture, memory and a real sense of place.

We were also lucky to taste some of Savage’s dishes in the evening, where Andrea showcased his beautiful work and his deep respect for Norwegian produce.

This is what Nordic Sessions means to us — creating experiences with cultural value, and giving our guests a deeper understanding of Norway through people, food, craft and shared moments.

This session also marked the official kick-off of our partnership with @bobo.store_official — with more to come.

We poured with two of their glasses:

Nubbe — a mouth-blown 4cl crystal snaps glass with an ultra-fine rim and a beautiful feeling of lightness.

Drajja — a mouth-blown 12cl crystal cocktail glass, elegant and precise.

Thank you to Savage and @selvaggio95 for making this session possible. A huge thanks also to our own @federico.biserni for leading the session and making everyone feel welcome, and a special mention to @kjetilandersen from @oioioi.no for capturing it so beautifully.

Now it is over to our guests to translate that experience into a cocktail serve inspired by Norway, knekkebrød and their time in Oslo — with @altamuradistilleries back home.

Taco Friday in Oslo 🇳🇴🌮

A simple tradition, but a real one.

Good food, good people, good drinks — and a chance to share one of Norway’s most loved social rituals with guests from around the world. We explored Oslo @visitoslo together, shopped together, and cooked together, which made the whole experience feel warm, personal, and real.

In Norway, Taco Friday is more than just a meal. It is a weekly ritual — social way to end the week and start the weekend. It brings people around the table, lets everyone build their own plate, and has become a real part of modern Norwegian culture.

A big thank you to Helle Øder Valebrokk @helleskitchen for explaining about the Norwegian Friday taco. As one of the key voices in Norwegian food culture — and the author of a book on Taco Friday.

A special thank you as well to @mariachisoldeoslo for bringing so much energy to the session and for promoting Mexican culture through dance, music, high artistic production, and original compositions.

And a huge thank you to the amazing chef Jose Luis Freitas @happychef88 for helping us cook and bringing the food experience to life.

This is what Nordic Sessions is about for us: creating experiences with real cultural value.

Nordic Sessions — Coffee & Buns 🇳🇴☕🥐

Over the past few days in Oslo, we hosted a new edition of Nordic Sessions at HIMKOK, built around one of Norway’s simplest and most comforting traditions: coffee and buns.

We brought together an incredible group of people to experience a slower side of Scandinavian hospitality — coffee cupping at @fuglencoffee_oslo (hosted by @alba.kaza) and a hands-on workshop in classic Norwegian bun making.

From discovering Norwegian coffee culture — balance, clarity, ritual — to learning how to make proper cinnamon buns with @maurizio.luongo , the goal was never just to taste. It was to translate an everyday tradition into hospitality.

This session was built around warmth, repetition, conversation, and the kind of simplicity that stays with you.

We hope that Scandinavian feeling came through, and now we can’t wait to see everyone’s own Norwegian Coffee & Buns–inspired serve with @buffalotrace and @tiamariadrink — something approachable, comforting, balanced, and easy to recreate at home. We’re looking forward to seeing how you interpret the experience and bring it to life in your own serve.

A huge thank you to our own @kylian.chambon for leading the session — and for creating an alcohol-free serve to keep the good mood going.

Kylian’s Alcohol-Free “Coffee & Buns” serve:

40 ml Amaro Lucano Zero
20 ml Monin Ruby Chocolate
60 ml Fuglen Cold Brew

Shake hard with ice, fine strain, serve in a chilled coupette.

HIMKOK Nordic Sessions — Pilot Edition ❄️

We kicked off the very first Nordic Session with a beginner cross-country skiing experience just outside Oslo. No egos, no performance — just cold air, balance, a few falls, and a lot of laughs.

This wasn’t a guest shift. It was about stepping outside the bar and into something that actually defines Norway.

FIKA

Our design for the FIKA drink is admittedly a bit on the nose, in a good way.
Fika is that cherished time in Sweden for a coﬀee break, often with some baked goods and
always with good company. So we designed a coﬀee pot made specifically for that moment.
We wanted the object to reflect the story behind the drink and where it draws its inspiration
from. A coﬀee pot is rarely used alone, it’s a shared item, just like fika is a shared pause in the
day to connect, unwind, and enjoy something simple together.

CUCUMBER

This drink was so fresh and surprising that we wanted to create an entire mood around it.
When we were testing the menu, the cucumber cocktail quickly became a favorite. It was
subtle but energizing - light, fun, and something we kept coming back to. It just felt right, like it
had found its natural form. That feeling stuck with us, and we started thinking about how to
extend the experience beyond taste.
We explored how scent could deepen that sense of calm and clarity. So we designed an oil
diﬀuser made specifically for cucumber oil, gently heating it into vapor to fill the space with the
same refreshing character as the drink. The object itself is understated and quiet, meant to sit
in the background and let the scent take center stage.

CARROT

The carrot drink felt like a gentle twist on something familiar, the Negroni, a fresh take on a
classic that made it softer, more approachable. We wanted to echo that idea: to reinterpret
something known while preserving its core. In our case, the candlelight.
Our design is a wooden bowl made from two types of hardwood - cherry and walnut - glued
together before being shaped. At its center, the form narrows to hold a single candle. When lit,
the flame casts a warm glow across the contents of the bowl, creating a soft and inviting
atmosphere, much like the drink did for us.

PLUM

The plum drink felt both inviting and layered, each sip revealing something new, growing
warmer and more comforting as we went. We wanted to capture that evolving experience by
designing a series of identical forms, each treated with diﬀerent textures, colors, and degrees
of transparency.
The result is a collection of wall hooks in varying shades of plum, drawing from the fruit’s skin,
flesh, ripeness, and subtle shifts in tone. They’re designed to be the first thing you meet when
entering a space, oﬀering the same quiet warmth and welcome we felt when tasting the drink
for the first time.
