When @_susysz_ and I found a recipe for Popcorn Praline, I knew I had to make bonbons 🙂‍↕️ Then we realized the recipe wouldn’t be enough and Pinterest found me a freaking Popcorn Ganache 🤩 So here are my Popcorn Bonbons. Lots of learning as always and I’m so happy with these fun and tasty bad boys ☺️

Another cruise ship contract finished! I honestly had such a wonderful contract and that was 1000000% due to the people 🥰 Thanks for memories, and the hugs, and the laughs. Love you all to pieces xoxoxoxo by @hippiebff

So when I posted last time I didn’t realize the “What will she make next?” question would be answered the next day 🤣

Here we have a Coffee Tart made for a friend’s birthday on board. It’s a coffee crème légère (pastry cream lightened with whipped cream), with a base of hazelnut crunch and a creamy chocolate caramel center 😌🤌🏾🤌🏾

She’s got a (Char)lotte to say 😆

Playing with flavors and I made this version using a spiced bavaroise (cardamom, vanilla, cinnamon, coriander and timut pepper), raspberry and blackcurrant pâte de fruit and frozen raspberries. What shall she create next? 🧐

Black sesame praliné and kalamansi bonbons 🤩

This was my first time making bonbons since pastry school and I’m so proud 😭 A labor of love, but also joy, a moment or two of panic (🤣) and tons and tons of words of affirmations to myself and the chocolate. I learned so much this round and I’m excited to continue. Thanks @bertholetpol and @jbowman91 for the excellent lessons on tempering and @soleneroblot and @_susysz_ for all of the advice 🫶🏾

From France to the high seas 🚢🌊 It’s been a little over a week, but I’m thoroughly enjoying my new adventure with Disney Cruise line as a Demi Chef de Partie Patisserie. Swipe to the end to see 19 year old Val during her Disney College Program days ☺️ So grateful for this opportunity to see new parts of the world, meet wonderful people and continue growing my pastry skills ☺️
