Sun Aug 09 at @barselecta.au 🍢🍸Hot plates are getting switched out and we’re ‘avin a cheeky boogie around East/South-east Asia 🕺🏻THE SKEWER SITUATION — 🇻🇳 I 🩷 THỊT KHOSticky Vietnamese braised pork belly with caramelised edges, umami sweet glaze and quail egg. Soft, glossy and dangerously easy to inhale.🇨🇳 LUCKY LAMB 888Juicy lamb loaded with cumin, chilli and warm spices, charred until smoky around the edges and absolutely covered in flavour.🇰🇭 CAMBO GIRLTender beef marinated with an aromatic lemongrass paste, then grilled hot and fast for maximum caramelisation.🇯🇵 THE OGGlazed chicken and sweet spring onion, grilled until sticky, smoky and just charred enough to make you order another.🍄 MAGIC MUSHROOM (v)Big, juicy mushroom soaking up all the savoury glaze and hotplate goodness. A main character. In EP02 of Hot Plate Behaviour, we invite you to think about OFFCUTS outside of a kitchen context.Being resourceful with your produce goes beyond using skin, fat, bones, and scraps.Oftentimes as humans, we paralyse ourselves in the space between an idea and execution. We lose time gauging whether a task is worthy of risk, worthy of steakholder value, worthy of effort.Reality reminds us that perfection may never be achieved, in whatever way you define that.Practice can be ugly, progress can be embarrassing, but everything in between is still proof;Proof of progress;Proof of presence;And proof that it is always worth the time and effort in the first place, podium or not.•Thank you so much to Martin @studioarthousegalleryaustralia and to you, our AMAZING patrons for coming to EP02 last weekend with an open mind. HPB EP02 isssaaa WRAPPP 🍳🕺🏻We actually have no words to describe whatever the f*k that weekend was, here’s part 1/?? of our film dump.To Martin, friends and family, our chefs, FOH baddies, media team, DJs, party people, and big backs — EP02 only happened because of every single one of you who carved time out of their weekend for us 🥹 Some of you trekked it all the way from the south-east, some of you apparently PT’d over an hour for us?!!!
