Top it off with some Lime Soda. Serve and enjoy this beautiful drink! โœจ

Donโ€™t be shy of using plenty of mint leaves when using Don Papa Masskara Rum, since its smell is very pungent alone and it may overpower the smell and taste of your mints.

When using ingredients that has distinct smell, try using a wine glass to enjoy more of it. In this way, the placement of your nose when drinking will be just over the top of the drinkโ€”which enhances your overall drinking experience.

When making a mojito, try stirring it gently with your sugar. The sugar will extract the good stuff out of the mint leaves, and reduce the production of the bitter notes when muddled incorrectly.

Try making this drink and let us know your thoughts! ๐Ÿ“ฉ

Enjoy making your Mojitos at home! Cheers! ๐Ÿฅ‚

Tiki cocktails, one of my favorite cocktail family. Overproof spirits, fruity ingredients and complex combination of flavorsโ€”just exactly what we would love to sip on during a relaxing day at the beach. Regardless of the current rainy season in the Philippines, Tiki cocktails are still very enjoyable any time of the year. ๐Ÿน

Little did I know that thereโ€™s an article from @punch_drink that stated, โ€œWithout Filipino bartenders, thereโ€™s no Tikiโ€. Such a humbling article that at some point in cocktail history, Filipinos were part of it. ๐ŸŒธ

From the articleโ€”โ€”
โ€œMystery has always been central to tikiโ€™s appeal. The sleight of hand inherent to the genreโ€™s allure can range from the benignโ€”encrypted recipes, hushed techniquesโ€”to the elaborate: the culturally obtuse cultivation of Asian, Caribbean, Hawaiian and Oceanian customs, all in the name of a faux-tropical experience. Of all the people shortchanged by this fast-and-loose dedication to fantasy, however, no group has been as overlooked as Filipinos, whose contributions to the birth, growth and survival of tropical drinks cannot be overstated.

The relationship between Filipinos and Tiki was, in part, a result of timing. The first large-scale Filipino migration to the United States took place in the early 1920s. Thousands of Filipinos, almost all single men under the age of 30, crossed the Pacific Ocean by freighter from the port of Manila to the West Coast. While those who disembarked in cities like Seattle and San Francisco found employment in seafood plants and farm fields, respectively, Filipinos who landed in Los Angeles gravitated toward domestic and service work. Over the next decade, Southern California would develop the highest concentration of Filipinos in America; by 1933, Los Angeles County alone was home to nearly 20 percent of the 65,000 Filipinos new to the States, according to historian Linda Espanฬƒa-Maram.โ€

The Mojito

My favorite go-to-cocktail, the first cocktail I fell in love with is the Mojito. One of the first cocktails I learned how to really enjoy, make and serve.

Making it, is as tricky as it gets. You have to gently extract the flavor and essentials oils out of the delicate mint leaves. I learned this the hard way, a typical newbie would probably muddle the mint leaves so hardโ€”that itโ€™ll extract the bitterness out of it.

Moving on to limes, I tried using several citruses and finding out which best fits my palate. By nature, my palate tends to look for sweetness in my drinks so what I usually do is to use lemon juice instead of lime, then I add it along with my mint leaves and sugar before I muddle it.

I always use table sugar for my Mojito recipe. Somehow, I find it more flavorful than using sugar syrup since a table sugar will naturally extract more essential oils out of the mint leaves.

Well, I guess everybody has their own way of making mojito. We all just have to find that โ€œpersonalโ€ favorite recipe that best fits our palate.

My recipe calls for:
15-20pcs Fresh Mint Leaves (i like it minty)
3 barspoons of sugar
3/4oz Lemon Juice
1.5oz White Rum
Top with Soda water or Lime Soda

In a highball glass, put your mint leaves, lemon juice and sugar. Muddle it gently, and add your Rum. Add some crushed ice and top it off with your soda.

*You can play around with light flavored clear soda, youโ€™ll be surprised how good can it be. Iโ€™ve tried using a cucumber and lime soda, and it just works! Try it yourself!

Happy world cocktail day! ๐Ÿธ

Every person whoโ€™s passionate in the beverage industry can easily tell whenever a drink was crafted with love. Once a drink touches your tongue, the flavor slowly evolves as you consume more liquid into your mouth. Youโ€™ll be surprised when you let your drink sit for a few minutes and take some time before you take another sip. New flavor notes will start to come out, as the temperature of the drink slowly shifts and components of the drink blend.

I always enjoy drinking somebody elseโ€™s drinks. When I tried @toyoeatery โ€˜s cocktails, i was truly mesmerized by the different taste notes revealed by each facet. Really enjoyed every sip of it. Their passionfruit cocktail on the upper right photo, was my top pick amongst all four cocktails. They used a locally sourced passionfruit which truly gave its beautiful flavor profile.

To top it off, they also provided one of the best services i encountered, and this elevated the experience even more.

I encourage everyone to try visiting this place, and meet the amazing @francis.xisco ! A friend of mine who's been tending behind the stick passionately since 2015!

Cheers!

Pakwan Daiquiri (Watermelon Daiquiri)

Another cocktail I concocted for @manilacraft ๐Ÿ‰

Classic cocktails in my opinion are like humans, they have their own DNA that can be found in many drinks.

Whenever creating new drinks, I carefully pick the ingredients that you can easily identify from your first sip. Youโ€™d be surprised on how adding a few ingredients to a classic recipe can instantly elevate the flavor profile of a drink ๐Ÿธ

For me, itโ€™s always about keeping the complexity level moderate and make the flavors explosive ๐Ÿ’ฅ

My mom always tell me back when she was alive, โ€œdonโ€™t make your life too complicatedโ€. I tried doing this motto, and it worked just as perfect. โœŒ๐Ÿป

@manilacraft x @tabletopstudio.mnl Cocktail shoot collab: Manila Sangria

Back in 2012, I had my first taste of Sangria from a wine bar in Manila. Before, I barely liked drinking wine. Just like when i hadnโ€™t drank Whiskey yet, I didnโ€™t know that it could be a favorite. Thankfully when I had the chance to try Sangria for the first time, it became a bridge for my liking of drinking wine on its own. ๐Ÿท

On a side note, Old Fashioned also paved the way for my love of drinking Whiskies. ๐Ÿฅƒ

I have always known that cocktails play an important role on oneโ€™s palate. Itโ€™s a good gateway into enjoying a spirit or wine on its own. Ever since I started enjoying drinking mostly every drink plainly on its own, I slowly recognized tasting notes that helped me develop a good set of flavor profiles to make my own cocktails.๐Ÿน๐Ÿธ
