🥟 18 EMPANADAS LATER… 🥟🔥

The Hudson Valley Empanada Festival in Newburgh, NY, couldn’t have asked for better weather! The Hudson River provided the perfect backdrop, the fall foliage was showing off, and the crowds came hungry!

As one of the judges, I had the deliciously difficult task of sampling 18 different empanadas! From traditional beef to jerk chicken, coconut shrimp, guava cream cheese, smash burger, and even lobster, there was no shortage of creativity.

Food trucks and vendors traveled from all over, including New Jersey and Westchester, bringing their own flavors and interpretations.

Returning champions @cubitatruck crushed the competition once again, taking home another FIRST PLACE victory at the Hudson Valley Empanada Festival! 🏆

Chef @hudsonchef continues to prove that he knows a thing or two about Cuban cuisine. If you haven’t made the trip to his restaurant in Nutley, NJ, it’s well worth the drive! From incredible empanadas to authentic Cuban sandwiches and everything in between, they’re serving up some serious Cuban flavor.

So next year, grab yourself a fresh lemonade, find a spot by the water, soak up the scenery, and most importantly, BRING YOUR APPETITE! 🥟

Where does the time go. It feels like just yesterday I was holding you for the first time and now you’re 6. God brought you to me when I needed you most. As much as I am an influence in your life, believe me, you saved me. I hope one day you’ll understand how much you’ve done for me and how much fulfillment you bring to our lives. I was once told “ you now have to become the man you want her to end up with” and I try to remember that everyday. I am incredibly proud of what a kind, smart, thoughtful and beautiful girl you are. Happy birthday my love. by @hudsonchef
