What is specialty coffee? What makes them different from lower-quality coffees?

Firstly, a high-quality in every cup (which is determined by a cupping score that should be above 83 points). Secondly, complete tracability back to the origin of the coffee lots.

In order to reach a superior cupping score we need two conditions to be met:

High cleanliness and balanced sweetness & acidity.

And aromatic complexity.

Being able to track the coffee back to their origin is not only important to understand the story behind each coffee but also to make sure that fair conditions for farmers are met.
