What a day yesterday was!
Blessed to be able to share the stage with some of the best chefs in Perth, @7newsperth celebrities and my beautiful family.
Food is life and I love working with @spudshed to bring their cooking stage to life.
Most importantly to all the people and fans who show up and watch, we love you and I hope you get stuck in the kitchen to recreate one of the magical recipes the talented chefs cooked up yesterday.

Sunny begged for cheesy chicken pasta, so I whipped up this gourmet masterpiece with love and a sprinkle of magic. She took one bite and said, ‘I don't like it, can I have toast?’ Michelin-starred effort but a brutal review. Don't trust her though.. it's quick, delicious and better than packet stuff!

Quick Chicken and Speck Alfredo Pasta Shells

Ingredients:

150g speck, diced
150g chicken, diced
250g pasta shells, uncooked
50g butter
300ml cooking cream
½ cup freshly grated cheese
¼ cup grated Parmesan cheese
1 pinch ground nutmeg
1 egg yolk
Parsley, chopped (to serve)
Olive oil (to serve)
Salt, to taste

2 tablespoons grated Parmesan cheese (optional)
---
Method:

1. Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta shells according to the package instructions until al dente. Drain and set aside.

2. Prepare the Speck
Heat a large frying pan over medium heat. Add the diced speck and cook until golden and fat has rendered out

3. Make the Sauce
In the same pan, melt the butter over medium heat. Stir in the cooking cream, freshly grated cheese, Parmesan cheese, and ground nutmeg. Cook gently, stirring until the cheese melts and the sauce thickens slightly. Add the chicken.

4. Incorporate the Egg Yolk
Turn the pan to a low heat and whisk in the egg yolk for a rich, creamy texture. Make sure it has slightly cooled so the egg doesn't scamble and gently combine everything together including the pasta.

5. Serve
Transfer to serving bowls, sprinkle with parsley, and drizzle with olive oil. Add an extra 2 tablespoons of grated Parmesan on top if desired.

Enjoy this simple, creamy and flavorful dish!

Sous Vide @australianmeats Kangaroo Strip Loin with Anchovy-Caper Vinaigrette
.
Ingredients
.
For the Kangaroo
1 kangaroo strip loin
1 tsp smoked sea salt
1 tsp fresh rosemary
1 tsp dried juniper berries
1 tbsp ghee
1 tbsp olive oil
.
For the Vinaigrette
.
1 tbsp thinly sliced onion
1 tbsp capers
4 anchovies
1 tbsp apple cider vinegar
2 tbsp olive oil
.
To Serve
Sourdough or ciabatta, charred
.
Special Equipment
Vacuum sealer
Sous vide machine
Blow torch or BBQ grill over fire/coals

---

Method

1. Prepare the Kangaroo

Pat the kangaroo strip loin dry and leave it uncovered in the fridge for 24 hours to air-dry.

2. Make the Herb Rub

Combine the smoked sea salt, fresh rosemary, and dried juniper berries in a pestle and mortar. Crush into a coarse rub.

3. Season and Marinate

Rub the herb mix, ghee, and olive oil all over the kangaroo in a mixing bowl. Ensure the loin is evenly coated.

Place the kangaroo, along with any remaining marinade, in a vacuum seal bag. Seal the bag tightly.

4. Sous Vide Cooking

Preheat the sous vide machine to 56°C.

Submerge the vacuum-sealed kangaroo in the water bath and cook for 2–3 hours.

5. Make the Vinaigrette

In a small bowl, combine the sliced onion, capers, anchovies, apple cider vinegar, and olive oil.

Mash the anchovies and capers thoroughly with a fork to create a cohesive vinaigrette.

Cover and refrigerate for at least 1 hour.

6. Char the Kangaroo

Once the sous vide cooking is complete, remove the kangaroo from the bag and pat it dry with paper towels.

Char the exterior using a blow torch or by grilling it over hot coals until slightly blackened.

7. Rest and Serve

Let the kangaroo rest for 15–20 minutes before slicing into thin pieces.

Drizzle with the prepared vinaigrette.

Serve alongside flame-charred sourdough or ciabatta for a smoky, rustic touch.

Enjoy this bold, flavor-packed dish!

Getting older changes your perspective. You stop worrying about what other people think and stop chasing things that drain you. What matters is depth, peace and the stuff that actually counts.

I spent decades fighting my weight, fighting surgeons who said I'd never run or lift again, and dealing with sporting failures, constant injuries, stress, running businesses, long work hours, and the TV and influencer world.

Now all I want is to be the best dad I can be. Strong enough to carry my girls, physically and emotionally. Clear headed enough to not yell (much), and to come home from work with enough left in the tank to give them more.

I'm not building towards anything. I'm just trying to be a better version of me every day.

Lawn reno done, kid and frog approved. 🐸
Palmetto buffalo loves warm soil, so I didn't guess. I stuck my meat probe in the lawn every morning until it hit 18 degrees, then got stuck in that weekend.
The lead up:
✅ Mowed weekly on the lowest setting my Ozito cylinder mower has (16mm or 14mm I can't remember)
✅ Hit it with a quality fertiliser like WA Turf Co Season Pro bout 6 weeks out
✅ Light scarify with the dethatching prongs, 20 to 30 catchers of thatch out
✅ Mowed again on the lowest setting to clean it all up
Then the recovery stack, all from WA Turf Co:
💧 aquaG granular wetting agent
🌱 Kickstart quick release fertiliser
🌿 Soaked it in with soilSURGE, a 3 in 1 hose on treatment with humic and fulvic acids, seaweed and a wetting agent

I went lighter than the full send renos you see online on purpose. The girls are out here every day and the frogs have claimed the lawn, so it had to stay usable the whole way through. Not perfect, but perfect for what we wanted.
Now we wait and watch it fill in. Full results coming. 🌿

Bit of a throw back.. still gives me butterfly's and goosebumps watching this.
Feels like it was yesterday!
It will stay as one of the highlights of my life, receiving double 10s from two cooking legends @manufeildelofficial & @chefpeteevans but the biggest thing to come out of the show was the friendship and bond I made with my sister.

We became closer than ever and have stayed closer than ever since then as well.

Also what I learnt about food from Manu, Pete and @cfassnidge changed my entire idealology on cooking, food and how I respect the food, create with it and work in a kitchen.

Great experience and hopefully one day @channel7 do a 'Past Legends' series and we can go back and do it again!

I'm not watching them jump on a trampoline. I'm watching the last of the baby years pass by, one bounce at a time.

The changes are happening so quickly now, they are changing so much.. to think one day (very soon!) these beautiful babies won't be like this anymore ..

Cherish these moments.

41 soon.
Two knee recons, a bicep recon, a herniated C7 and abdominal adhesions. I'm not telling you that for sympathy. I'm telling you because it's why the gym looks so different to me these days.

It's not heavy weights and smashing my body to failure anymore because it can't do that anymore
It's movement. Slow, steady, calm and focused. Looking after my body and managing my pain so I can keep everything going.

Big thanks to @zoofit.au for the creche. Ninety minutes of me time while the girls are looked after is a game changer.

I can't play basketball anymore or leg press 300kg but I can still move, stay strong and keep grinding, for me and for my family.

I don't lift to break my body anymore. I move to build it back, one slow, steady rep at a time.

Won't stop. Can't stop.

Sooooo...Ella's away for work, Valley is sick and it is school holidays for Sunny so I took the rest of the week off to be Super Dad.
Sunny had her kindy health check today. Eyes, teeth, ears, the works. During the hearing test, Valley was being a bit loud, so I did the responsible thing and put on Bluey. In Auslan. Silent. Genius parenting.. tick for Dad.
All the tests done. Proud moment. I get my phone back.
Notification: "Thanks for your eBay purchase. $450."
Valley bought a Bluey table and chair set.
She can't clean her room. She can't tie her shoe laces. But she can apparently navigate eBay checkout faster than I can.

So I called the bank and before I'd even finished my sentence, they cancelled my card. The card I got THIS WEEK. Every bill we have is linked to it. New one arrives in 10 days.
So now I've got no card, no money, no wife until the weekend, and a $450 Bluey desk potentially on it's way.. hopefully the merchant or @ebayau can go ahead and fast track my cancellation request on this (PLEASE!)

The good news is Sunny passed her hearing test. Which means she heard every single word I said when I opened that notification and saw the eBay order.. 🤬
Valley, if you're reading this in 20 years, you owe me $450. Plus interest.
I was legit nailing the first 4 hours of Solo Dad life.. and I crumbled on the 5th... Please come home @ellabeeofficial

Today would have been Gran's birthday.
Gran loved frogs. When I was a kid she signed me up to Frogwatch. Grandma, Dad or Mum would drive me around collecting tadpoles out of people's pools and buckets. Dad helped me build a pond at home. We built them at Gran's place too.

Two years ago we bought this house we now live in, redid the gardens and put ponds in. We've been rescuing tadpoles ever since. Exactly like Gran taught me.
Last night, the eve of her birthday, we heard a frog croak in the backyard for the first time. The girls came running. Sunny started doing frog calls... Damn this is so hard to write.. I wish she was still here to witness the life and family we have made and to show her how much of it is influenced by her.

The first time Gran met Ella she told me straight away that she was the one and that I shouldn't be stupid about it. No hesitation. Gran just knew. She told me straight away how important babies are and Ella was the one and she would be the mother of my children... She said marriage can wait... Babies are more important. Literally her words.

Sadly she passed before Sunny was born (I'm not crying you are). We were so excited to tell her we were pregnant. And the thing that gets me is Sunny is every bit of her... We call her Mini Phyllis. Sometimes we look at that kid and it's like looking straight at Gran. The way she looks sometimes and her tenacious sassy attitude.. it feels like Grandma reincarnated.

At her funeral I read something I'd written. Two lines were about things that hadn't happened yet.
"Just know that I will think of you
Every single day of my life
Like when I hold your great granddaughter
And make Ella my wife"

Both happened after her passing and it kills me that she wasn't here to see them... Moments that I can only imagine about and how special they would have been to share with her.

Happy birthday Gran.
I know you are still here every single day watching over us. by @iamblakeproud

🚨 OFFICIAL ANNOUNCEMENT: I AM LEAVING THE LA CLIPPERS.

After careful consultation with family, friends, financial advisers and absolutely nobody qualified to give an opinion, I've decided to terminate my relationship with the Clippers effective immediately.

This follows today's news that the Clippers copped 5 forfeited first round picks, a $30 million fine, a one year suspension for Steve Ballmer, and about 47,000 questions about what the fuck was going on over there.

To be clear, this isn't about performance. It's about my personal policy of not supporting organisations with fewer first round picks than my fantasy team has waiver claims.

My new home: 🐺 THE MINNESOTA TIMBERWOLVES.

Why Minnesota?
🔥 @theanthonyedwards_ Genuine franchise superstar. I like having a guy.

🧱 Rudy Gobert. Nobody's getting through the paint.

🎯 LaMelo Ball. Because Ant's life clearly wasn't chaotic enough.

📈 They're building. Made the playoffs, knocked out Denver, pushed the eventual conference finalist Spurs to six games.

💰 Ayo Dosunmu just signed five years, $112 million. They're not mucking around.

Most importantly, Minnesota has the exact level of organisational chaos I require. Traded Randle, moved on from Reid, added LaMelo, created a giant question mark at power forward, and I looked at all of it and thought "yep, that's my team."

So after years of loyalty, heartbreak and pretending Kawhi was definitely playing 70 games this year, I'm officially a Wolves fan.

If anyone produces evidence I said otherwise, those comments were taken out of context.

WE'RE IN THE WOLF PACK NOW. 🐺
