I used to be absolutely terrified of dogs, but this little ball of fluff showed me that dogs are not just about aggressive barks or dogs just puncing on you, but it's so much more. It’s been 10 months, and not a single day goes by that I don’t think of this little goofeball. They say it gets better with time, but every single day hurts the same. They say God does everything for a reason, but what can possibly justify this? I don’t understand. Ever since I was a kid, I have always been fascinated by brownies. I used to think that when I grew up, I would make them for myself all the time. Back then, I used sugar, but now we’re all about making healthier choices, so we’re switching to Stevia. I’m sharing my recipe with you, and I hope you like it!🤎✨

Chocolate Muffins

Ingredients
• 1 cup all-purpose flour (142 grams)
• ⅔ cup stevia baking blend
• 2 tablespoons + 2 teaspoons cocoa powder (9.3 grams)
• ⅔ teaspoon baking soda
• ⅓ teaspoon salt
• ⅔ cup cold water (152 grams)
• ¼ cup canola oil (49 grams)
• 2 teaspoons white vinegar
• A handful of chocolate chips

Instructions
1. Preheat your oven to 350°C (662°F) and line a muffin tray with liners or lightly grease it.
2. In a large mixing bowl, whisk together the dry ingredients: flour, stevia baking blend, cocoa powder, baking soda, and salt.
3. In a separate bowl, combine the wet ingredients: cold water, canola oil, and white vinegar.
4. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing.
5. Once the batter is smooth, add a handful of chocolate chips and gently fold them in.
6. Fill the muffin tray about ¾ full with the batter and top it up with more chocolate chips.
7. Place the tray in the preheated oven and bake for 15 minutes, or until a toothpick inserted in the center comes out clean.
8. Remove from the oven and let them cool slightly before enjoying!

PS. Don’t forget to brush your muffin tray with oil. I was stupid enough to not do that and my muffins got stuck, but they tasted heavenly.🥰
