A fine day out at @thornbridge with the estimable @dominic_driscoll and our friend Yvan DeBaets of @brasseriedelasenne to brew our new collaboration, ā€œMade Glorious Summerā€, on the resurrected and justly famed Thornbridge Union system. 

The beer employs a long and complex mash to achieve a very fermentable wort, which dries out thoroughly as it surges through the union’s casks, pipes and troughs, driven by a traditional Yorkshire yeast, eventually reaching 23° C / 73.5 F and an almost saison-ish ester profile. 

Pale malts and oats provide the racy underpinning while West African-grown fonio gives its lychee-like ā€œwhite wineā€ tropical notes. 

ā€œMade Glorious Summerā€, part of our emerging collaborative series we’ve dubbed ā€œGarrett Oliver & Friendsā€, is best enjoyed as it was brewed - with terrific people. 

It’s essentially a Belgian-ish take on an English summer ale, more-ish and deceptively strong at 5.8%. It’s summertime, and we must all turn aside our respective winters of discontent. With such a quaffable beer one must be a bit careful…but isn’t that always the way with sunshine? by @igarrettoliver

Many were raptured this last weekend at the full-on bacchanal that is the spectacularly odd but endearing @carnivalebrettanomyces. An amazing program of talks and tastings and a general air of ā€œanything could happen and it will all be niceā€. Thanks to Jan, Siebrand, Baas, and the entire Carnivale crew for the kind invitation and warm welcome. Special mention to @theyeastdaddy for keeping things spicy. This just in from the rooftop gardens of Brooklyn, where legendary brewmaster Garrett Oliver (@igarrettoliver) tells a tale of an expedition deep into the holy Belgian beerlands.

This fall, Garrett will be leading the beer pilgrimage to end all beer pilgrimages, together with two of the world’s leading experts on beer in all its gastronomic dimensions—celebrated Italian culinary writer Eugenio Signoroni (@eugeniosignoroni) and Roy Milner (@rmilnerbeer), founder of Blackberry Farm Brewery (@thebarnatblackberryfarm).

Running Nov 9-15, 2026, this rare journey takes us from the wild yeast of Pajottenland’s farm breweries to the spectacle of Flemish horse-shrimping to the holy sanctum of Orval Abbey and beyond. We’ll also stay for two nights at the extraordinary restaurant and guesthouse @willemhiele (currently number 62 on The World’s 50 Best Restaurants list), housed in a brutalist masterpiece by Jacques Moeschal in the middle of a nature reserve.

And yes, in case you were wondering, Garrett is indeed an Enthroned Knight of The Brewer’s Fork of Belgium, so we will be crossing thresholds off limits to mere mortals. This is truly a trip unlike anything else out there. Spots are limited.

Oostduinkerke, a village on the southwest coast of Belgium, is the lastĀ place on earth where the practice of horseback shrimp-fishing still goes on as it has for centuries.

Known locally as paardenvissers, a tight-knit group of just a dozen or so households still take their Brabant horses into the shallow waters of West Flanders for three hours around low tide. The horses wade chest-deep parallel to the shoreline, dragging chains along the seabed to startle local brown shrimp up into funnel-shaped nets.

On day four of our journey through Belgium, we will witness this disappearing tradition with Willem Hiele (@willemhiele), one of Europe’s most fascinating chefs, whose eponymous restaurant and guesthouse (where we’ll spend two glorious nights) is currently number 62 on the World’s 50 Best Restaurants list.
