BRINE LIKE A PRO! My Secret Brine Recipe Revealed!

UPDATE! Last time I shared with you my excitement about trying out a new turkey brine recipe... and I'm thrilled to report that it's DONE and it's AMAZING!!! The flavors melded together perfectly, and the turkey was incredibly tender and juicy. Now, I'm confident to share the brine recipe with you all! Get ready!

I'm excited to share that this recipe was inspired by my trusty sidekick's recipe library, which features over 90,000 recipes from around the world! I added my own twist and tips, of course.

Here's the recipe I used:

Ingredients:

• 1 whole turkey 6 to 7 kg
• 1 litter water
• 250 to 280g salt
• 250g brown sugar
• 220g ( honey, maple syrop, or agave syrop)
• 100g allspice berries
• 50g yellow mustard seeds
• 50g black peppercorns ( or rainbow peppercorns)
• 20 whole cloves
• 20 green cardamom pods
• 8 star anise
• 8 bay leaves ( fresh or dried)
• 2 spring sage
• 5 spring thyme
• 3 springs rosemary
• 10 spring parsely
• 250g onion, quartered
• 2 ginger roots ( 7cm each) pelled, cut into pieces (2cm)
• 3 cinnamon sticks ( 8 cm each)
• 2 oranges sliced
• 2 lemons sliced
• 1 garlic head halfed

Preparation Steps:

1. Combine water, salt, brown sugar, agave syrup, spices and herbs in a pot. Bring to a boil for 8 minutes.
2. Clean and prep the turkey by removing the neck and giblets, scrub with salt to remove any remaining fat or feathers. Rinse well and pat dry.
3. Chop onion and ginger 3sec/ speed5 , and add to the cooled brine mixture.
4. Pour the brine mixture over the turkey, add sliced orange and lemon, garlic, and refrigerate for 24 to 36 hours.

Foolproof béchamel in the Thermomix! Silky smooth, no whisking, no pieces, nothing burnt. I just followed the Cookidoo recipe: butter, flour, milk, salt, pepper, and fresh nutmeg grated right in. Poured it over my gratin, added cheese, into the oven.
