After Phil, owner of @incachickenbk, sent me an old picture of his dad at their original location… I decided to create an illustration based on it. Before drawing, I got to meet and talk to Guillermo Cha for about half an hour. Phil helped translate his dad’s words. Even though I don’t speak Korean… I could tell that what Mr. Cha was sharing was truly from his heart and the experiences that he’s lived through. The picture of Mr. Cha has that old graininess to it - I decided to illustrate a more vibrant drawing. I’m glad it made him laugh + smile!

I left feeling inspired and I was honored to meet him. I really respect his perpetual positive energy, diligent nature, will to live, and appreciation for every moment. This all led him to eventually start the legendary Inca Chicken, which continues make some of the best pollo a la brasa in the city.

One of the most meaningful drawings I’ve ever created! I met Guillermo Cha, an 89-year old Korean War survivor that escaped from the North and eventually opened @incachickenbk. During the war, there were many times he could’ve perished... but he was resilient. Eventually, he made his way to South America and settled there. He developed a passion for South American cuisine and fell in love with Pollo a la Brasa (Peruvian rotisserie chicken).

He dreamed of moving to New York City and opening his own Pollo a la Brasa spot. In 1989, Inca Chicken was born. Meeting and illustrating Mr. Cha was so meaningful and I got to surprise him and his son. Phil (the current owner of Inca Chicken)! My illustration is based on a picture that Phil and his sister shared with me - an old photo of Mr. Cha in the 90’s at the original Inca Chicken location. I added my own interpretation of colors abe style. I was so moved by Mr. Cha liking my artwork of him and hearing his perspective on life was so inspiring.

@incachickenbk in Brooklyn is much more than what meets the eye. It is a family-run spot in Bushwick since 1989 with an incredible story that goes from North Korea to Paraguay to Argentina to Peru to New York. The chicken is moist and flavorful with the best aji verde we’ve ever had in New York. Excellent ribs and chimichurri flavored BBQ sauce as well.
