On August 11, we will be gathering on Wilson Mesa for a five-course wild mushroom dinner in support of Biodiversity Collective’s field research. 

Every ticket supports biodiversity expeditions, field surveys, specimen vouchering, DNA sequencing, student participation, and community science initiatives that help document fungi and other overlooked organisms.

At the table, you will enjoy a five-course wild mushroom and wild foods dinner prepared by Graham Steinruck, thoughtfully paired wines from Sutcliffe Vineyards, a custom fungi-inspired beer brewed exclusively for the evening, and a special screening from Mushroom Wonderland featuring Biodiversity Collective’s field projects.

Most importantly, you’ll be joining a community that believes documenting biodiversity is one of the most meaningful ways we can better understand and care for the natural world.

On Tuesday, August 11 from 4:30–8 PM, join Biodiversity Collective on Wilson Mesa near Telluride, Colorado, for an unforgettable evening celebrating wild mushrooms, fine food, wine, and biodiversity.

Chef and Biodiversity Collective (@biodiversity_collective) founder Graham Steinruck will prepare a five-course dinner featuring locally sourced seasonal ingredients and wild foraged mushrooms, showcasing their diversity through creative and unexpected preparations.

Guests will enjoy wines from Sutcliffe Vineyards (@sutcliffevineyards), along with a custom beer brewed exclusively for the evening using fungi-inspired ingredients. The night will also feature a special screening from Mushroom Wonderland (@mushroom.wonderland) highlighting Biodiversity Collective expeditions and biodiversity documentation projects.

More than a dinner, this is a gathering in support of biodiversity documentation and exploration. Proceeds support Biodiversity Collective’s expeditions, specimen vouchering, DNA sequencing, student participation, community science initiatives, and collaborations with scientists, land stewards, and local experts working to document overlooked fungi and other understudied organisms.

Share a table with mycologists, foragers, scientists, naturalists, artists, and fellow mushroom enthusiasts while helping support the discovery and documentation of biodiversity.

Cooking with Fungi explores the versatility of edible mushrooms through a range of culinary techniques and approaches. Topics include proper cleaning and preparation, harvest considerations, and methods for preserving mushrooms at peak quality. The talk also covers how to work with dried and frozen fungi, and how different cooking methods influence flavor and texture. With examples spanning both savory and dessert applications, this session provides a clear framework for confidently integrating fungi into your kitchen.

Graham Steinruck is a chef, forager, and mycologist focused on the identification and culinary use of wild fungi. His work brings together time in the field with a background in fine dining, translating wild ingredients into seasonal dishes. He grew up in Colorado, hiking and exploring the Rocky Mountains, and is a certified Wild Mushroom Identification Expert through the Colorado Department of Public Health and Environment (CDPHE), qualified to inspect and approve over 50 species of wild-foraged mushrooms.

Graham is the founder of Biodiversity Collective, an educational initiative connecting people to overlooked organisms through field-based experiences and collaborative research. His work includes leading fungal surveys, workshops, and culinary events across the United States.

In the kitchen, his focus is on local, seasonal ingredients, highlighting wild fungi through thoughtful, ingredient-driven dishes. His recipes have been featured in Wild Mushrooms by Trent and Kristen Blizzard and the Fantastic Fungi Community Cookbook by Eugenia Bone.

A full day in the field and at the table.

Morning foray with special guest Graham Steinruck; chef, forager, and one of a small number of people in Colorado certified by the state to identify and approve wild mushrooms for culinary use. Evening dinner with Chef Kyle Mendenhall in a private Boulder County home.

By mid-May the Colorado mushroom season should be building. What we find depends on the rain between now and then. What we can promise is expert instruction in the field and an outstanding meal at the table regardless.
